Turkey Meatloaf Muffins
I’ve recently transitioned my diet back to a more protein focused/ low carb meal plan since I have been working out like crazy!!
These turkey meatloaf muffins are packed with protein, veggies, and oats!! The perfect snack or pair it with a salad and rice for a complete meal!
Adapted from Jamie Eason’s recipe
makes 10-12 muffins
– 1 lb extra lean ground turkey breast
– 2 egg whites
– 1 tsp black pepper
– 1 tsp dry mustard
– 1/4 tsp red pepper flakes
– 1/4 tsp thyme
-1/4 tsp cumin
– 2 minced garlic cloves
– 1/2 small onion finely chopped
– 1 celery rib chopped
– 1/2 cup quick cooking oats
Mix all ingredients in a large mixing bowl.
Preheat oven to 375.
Spray muffin tin with cooking spray.
Make muffins ( about 2″ in diameter)
Bake in oven for about 40 minutes.
