3 tbs Ghee
5, diced Sweet Onions
1 tsp Salt
1 tsp Pepper
1 tsp Arrow Root Powder
4 cups Bone Broth I used Honest Bison
For the meatballs
1 lb Ground Beef or Bison
1 tsp Salt
1 tsp Pepper
1 tsp, chopped Fresh Sage
1 tsp Cream of tartar
1/4 cup Almond Meal
1 Egg

A classic with a twist. These meatballs really tie everything together making this soup a one pot meal!

Let’s talk soup!

I have a large collections of cookbooks. Some loved more than others. But mostly I love reading them like novels and my favorite is Julia Child’s Mastering the Art of French Cooking. I have read it so many times and have only mastered like 5 of the recipes. One being the classic French Onion Soup.

I make it several times a month and it never gets old. But when I am going dairy-free on a Whole30 reset. I make it my own-a little bit different.

Jake likes to input a few requests in our weekly meal plan and this week he wanted French onion soup. But being on a Whole30 means we need to add a protein to make it a meal. So I thought of meatballs!

Meatballs are the perfect way to elevate this soup. It’s so filling and the extra beefy flavor made this oh so good! And it really pulls together this “incomplete” soup.

Caramelized onions are a MUST. And I do them the right way according to Julia Child. Low, slow cooking in ghee until it is browned caramelized deliciousness.

Next comes the bone broth. You could go with beef broth here, but bone broth just adds so much more flavor and we already know why it’s good for you. I usually make a large batch on the weekends to sip on or throw in soups throughout the week.

Then the meatballs. I kept the seasoning in these meatballs simple as I knew it would take on so much flavor in the soup. And because they were prebaked, they retain their cute little shape and add even more flavor!

And if you are looking for a good lunch option this week, look no further. This makes a lot. Especially more than the two of us can eat. HELLO LEFTOVERS!

And on a Whole30, nothing is better than grabbing leftovers that you didn’t have to prep/make on the spot. I usually eat it as is, or I spoon some over a baked potato or cauliflower rice.

This is a classic dish that your whole family can enjoy for dinner tonight.

Preheat oven to 350F

Combine all meatball ingredients thoroughly and roll into 1” balls

Place meatballs on a parchment lined baking sheet and bake for 25 minutes

In a dutch oven or heavy bottomed sauce pan, heat ghee on medium heat.

Add onions and saute until softened (about 5 minutes)

Add salt, pepper, and arrow root powder and continue to stir onions occasionally for another 20 minutes. They should be completely browned and caramelized.

Add broth and bring to a boil.

Once boiling, lower heat to low and add meatballs

Let simmer on low for 20 more minutes.

Divide among 6 bowls and eat!
