Like honestly. Some weeks I feel like a gourmet chef and whip up some pretty technical stuff. And other days I want grilled cheese and chicken nuggets.

It’s like how my playlist jumps from hip-hop to country to heavy metal. It’s how my brain works. And it makes for some great workout playlists. Or in this case cooking play lists.

Do any of you use your spatula like a microphone and blast music while cooking? I hope I’m not the only one!

So back to these chicken tenders. They actually have a back story…weird I know. But the VERY first time I cooked dinner for Jake back in college I used a recipe that involved dipping chicken in a mayo/mustard combo and coating with flour then baked in the oven. I was so proud of my attempt and I thought it came out great. However, little did I know Jake was somewhat of a picky eater. He asked what was in the chicken and I told him mayo. And he all but dropped his fork. I was super butt hurt to say the least, but hey, mayo isn’t for everyone. And he has come a LONG way from then and he LOVED these spicier chicken tenders for sure! He even had seconds!

When I was thinking of recipes for Primal Kitchen, I thought back to that recipe and decided to go with the same concept but make it spicier and Whole30 friendly. And THEY ARE SO GOOD.

Speaking of Primal Kitchen, these guys put a TON of effort into all the ingredients that go inside their products to make sure they are pure and lacking in sugar and nasty preservatives. Their condiments and salad dressings are full of healthful, natural fats, and superfoods (like avocado oil). They have SO many different products and I can’t wait to try them all! Especially if they are all as good as this mayo!

Ok ok, so these chicken tenders are so simple and flavorful. Just how I like it. And it goes in the oven, no frying involved which means they are even healthier!

To start, I patted each chicken piece with a paper towel to absorb any moisture. This allows the mayo to grip on and the flavor to seep in a little.

Then I coated each piece with the chipotle mayo and  dredged in some almond meal mixed with cayenne pepper for the finishing touch.

I baked them for about 20-30 minutes and enjoyed them with a side salad and homemade ketchup!

Preheat oven to 365

Line a baking sheet with parchment paper

Gather 2 bowls: one for mayo and one for almond meal

Mix almond meal with salt,crushed red pepper, and cayenne pepper

Cut chicken into strips and pat dry with paper towels

Dip each into egg then almond meal mixture and place onto the baking sheet
