1 lemon lemon juice
3 Garlic cloves
1 tsp garlic powder
1 tsp oregano
4-5 leaves, chopped basil for garnish
1 lb boneless skinless chicken breast cut into cubes
1 pint cherry tomatoes
1/2 onion red onion quartered
2 tbs balsamic vinegar

    I am still in disbelief that summer is winding down to a close. Like it’s the end of AUGUST people! Can you believe it?!

    Although, I can’t say I am too sad about it. I am all about fall (aka sweater weather and all things pumpkin!). I am also really tired of working out in this hot, humid, I-can’t-breathe weather.

    I do not enjoy sweating unless I am causing the sweat. Got it?

    But I do love that it’s grilling season and boy have I been giving our grill a workout! Actually, we tend to use the grill all year round so we enjoy all the grilling things even if it’s cold outside!

    It’s also no secret that I love everything and all things good for you and “clean”. And grilling makes eating clean so much easier! And I love creating replicas of my favorite dishes (but healthier).

    That’s when I had the idea of making these chicken caprese skewers, but nixing the cheese.

    Truthfully, I have SO many cherry tomatoes outside that I needed to use them before they went bad! I mean, they are too pretty to let them rot!

    These are so simple to make and are SO good. The marinade is a MUST! The chicken is just so moist and juice and full of Italian herbs and garlic. Gotta have all the garlic!

    I swear I love all things that make my breath smell ever so pleasant. Jake must love me for it because I always ask for a kiss after eating a salad with onion or these skewers with garlic infused chicken. Muwahahahah. Love you bunches! :*

    Grilled to perfection, sprinkled with fresh basil, drizzled with balsamic vinegar, and served with some cauliflower rice. I am in HEAVEN.

    Now if you would excuse me, I need to find a garlic pasture to hang out in.

    Make the marinade by whisking the olive oil, lemon juice, garlic, garlic powder, and oregano in a small bowl

    Place chicken in a sealable gallon bag or glass container and pour marinade over top, toss well

    Let chicken marinate for 2 hours in the fridge or over night

    Preheat the grill to 300 degrees

    Skewer the chicken and layer with onion and tomatoes

    Grill skewers for approximately 11-12 minutes, flipping half way through
