Ingredients

For the carnitas:
2 tbs Olive Oil
3lbs, cut into 2-3" pieces Pork Shoulder
1 cup Chicken Broth
1,diced Yellow Onion
3 cloves, minced Garlic
1-2,sliced thin Jalapenos
For the rub
1/2 tsp Cayenne Pepper
Pinch Salt
Pinch Pepper
1/2 tsp Smoked Paprika
1 tsp Cumin
1 tbs Chili Powder
For the bowls
4 cups, chopped Romaine Lettuce
1 avocado, smashed with sea salt Guacamole
Pico de Gallo
2, diced Roma Tomato
1, sliced Green Onion
1/4, diced Red Onion
1-optional Jalapeno

As you may have noticed, I have been on this huge Mexican food kick. I’m not complaining, but I swear I will be moving on soon- at least on the blog anyways…

So, I have actually had these to share for a while now and I really don’t know why I haven’t yet! I decided today is the day!

Although, I actually shared these a while back in December in my Whole30 recipes takeover.

Besides all things tacos. I am pretty much obsessed with bowl food. Always have been, even before it became a thang.

Put it in a bowl. I’m happy.

And you know those days where you REALLLLLLLLYYYYYYY want Chipotle???? (i.e. everyday)

These bowls have you covered. It satisfies the urge to pay extra for guac and best part? The pork shoulder roasts in a spicy, limey, tangy juices ALL day long and all you have to do is chop some veggies and mash an avocado.

Most weeks though, I make this as my meal prepped lunch.

On Sunday’s I cook the pork, chop the veggies, and make a HUGE batch of guacamole. I stack them in separate containers and make the bowls every day. Kind of like a buffet style. OMG, can they make a buffet at Chipotle???? (psssst Chipotle, if you are reading this, I want credit for this million dollar idea-just sayin)

And after stuffing your face hole with these Superfood Cacao Peanut Butter Cups all week and watching Beauty and the Beast on Valentine’s Day (or was that just me?), your Friday NEEDS these healthy burrito bowls!

Steps

Done

Mix spices together to create a rub

Season pork evenly with the spices

In a heavy bottom sauce pan heat oil on medium high heat

Sear pork on all sides (in batches if necessary) until browned

In a crockpot, add onion, garlic, seared pork, jalapenos, and broth

Let cook on low for 8 hours or on high for 6 hours

Place pork in a large bowl of plate and shred with two forks

While the carnitas cools, assemble the burrito bowls

Layer romaine, pico de gallo, carnitas, and avocado

Serve with lime wedges and plantain chips
