1 package of Jennieo turkey sausage Natural Turkey Sausage
1, diced Red Bell Pepper
1/4, diced Red Onion
3 tbs Salsa
1 tbs Taco Seasoning
Taco Seasoning

1/4 tsp Coriander
1/4 tsp Cayenne Pepper
1 tsp Cumin
1/2 tsp Paprika

And before I dive in, I want to know about what your biggest struggle is to stick with eating healthy all week long?

My biggest struggle is time. I work full time, then it’s the gym, dinner, and bed. Hit repeat. And by Thursday I don’t even want to think about cooking. Like it’s not happening.

But, since discovering the Whole30 and this new way of living. I’ve adapted the meal prep Sunday rule.

And by meal prep, I usually kill two birds with one stone and create a plethora of meals over the weekend to photograph for the blog, then I portion and it goes in the fridge for the week!

Which brings us to these Southwestern Taco Egg muffins.

I knew I wanted an easy paleo breakfast recipe to share and I also wanted it to be meal prep friendly. Especially for those of us who get up at unheard of times (cough 4:00 AM cough) and won’t get to eat breakfast until they get to work.

You know I LOVE my Mexican flavors here. So I knew that was a MUST.

And then these egg muffins happened and here we are.

And they are all thrown in the oven and done in 30 minutes! I think I need at least a golf clap for this achievement.

Just sayin.

The turkey sausage is cooked and seasoned with taco seasoning (I LOVE FLAVOR GOD) but I will give you a blend below that will work too.

Eggs are whipped, veggies, are chopped, and the ground turkey is stirred in one bowl. So really, you are only dirtying two things. A bowl and a muffin pan. I say that’s another victory in itself. Cause I am NEVER about cleaning dirty dishes. I just love making the messes. 😉

And since these are basically protein on protein, I consider this to be a VERY healthy option for breakfast.

I suggest eating 2 plus another healthy fat to balance out your nutrition. I love grabbing a handful of almonds or what would go great here is a few slices of avocado. YES. AVOCADO FTW!

Preheat oven to 350

Line a muffin pan with silicone muffin wrappers, parchment paper, or cooking spray

Whisk eggs and egg whites together until slightly frothy in a large mixing bowl

In a medium skillet, preheat on medium high

Add sausage and break apart into crumbles with wooden spoon

Once browned,(about 2-3 minutes), stir in the taco seasoning

Once sausage is fully cooked, add to egg mixture

Stir in peppers, onion, and salsa

Divide egg mixture into the muffin pan evenly

Bake in oven for approximately 25 minutes or until eggs are completely cooked
