I've recently transitioned my diet back to a more protein focused/ low carb meal plan since I have been working out like crazy!!
These turkey meatloaf muffins are packed with protein, veggies, and oats!! The perfect snack or pair it with a salad and rice for a complete meal!
Adapted from Jamie Eason's recipe
makes 10-12 muffins
- 1 lb extra lean ground turkey breast
- 2 egg whites
- 1 teaspoon black pepper
- 1 teaspoon dry mustard
- ¼ teaspoon red pepper flakes
- ¼ teaspoon thyme
-¼ teaspoon cumin
- 2 minced garlic cloves
- ½ small onion finely chopped
- 1 celery rib chopped
- ½ cup quick cooking oats
Mix all ingredients in a large mixing bowl.
Preheat oven to 375.
Spray muffin tin with cooking spray.
Make muffins ( about 2" in diameter)
Bake in oven for about 40 minutes.
