    It’s officially Fall! –does happy dance- this means pumpkins, warm mugs, flannel, running outside ( when I get this boot off), cooler workouts in our CrossFit gym, and camping!

    I find out this afternoon if I can finally take this boot off my foot and FINALLY get to wear two matching shoes again. I had to buy new CrossFit shoes and I have only broken in the right one! I am SO excited to get back into running. I was getting in my groove of running when I broke my foot. My kinda luck. But I plan on signing up for more races next year since I loved running my first 10K back in May. I think I am going to sign my mom and I up for the Color Run 5k! Those always looked like so much fun! Have any of you tried it? If so, would you recommend the day or night one?

    I also want to try one of those Spartan races! Wear you leap over fire, crawl in the mud, and have the time of your life!

    But since I am not physically capable at the moment, I have focused on my lifting techniques at the gym and even managed to PR my snatch ( Olympic lift) with a boot! Pretty proud of that!

    We had another relaxing weekend. Finished watching the 4th season of Hell on Wheels and I am now sad. I want to watch more! Any other binge worthy shows on Netflix?

    I also made a big batch of Slow Cooker Creamy Butternut Soup! SO GOOD.

    I also did A LOTof Pintersting. I have rediscovered my Fall wardrobe and since I am terrible about pairing outfits together I consult Pinterest. Lol

    We did some productive things too, like work on our new logo for The Kitcheneer along with the final touches on our new ebook!

    And after such a lazy day, I was in no mood to do a lot of kitchen work so I lazily made a one pot dish that we both loved and I know you will too!

    Lots of veggies are sautéed in ghee butter, and then add some Whole30 compliant chicken sausage and you are in business!

    You Need:

    1 tbs of ghee butter ( or clarified butter) or your choice of cooking fat

    2 garlic cloves, minced

    2 medium sized red potatoes, diced

    2 bell peppers cut into strips

    1 small onion, diced

    1 package of chicken sausage, cut into pieces (the apple flavor is Whole30 compliant)

    Directions:

    In a sauce pan, bring 3 cups of water to a boil and add potatoes and boil until soft but not falling apart ( 10 min) 

    In a large skillet, add ghee on medium heat until melted

    Add garlic and onion, saute for 5 minutes or until softer and translucent 

    Add potatoes and stir them in.

    Sauté potatoes for 5 min 

    Add bell peppers and sausage

    Stir frequently ( every 2-3 minutes) until sausage has browned

    Serve on its own or on top of cauliflower rice!

      I'm pretty sure I wouldn't like to run through the mud or jump over fire, but I would like to eat this veggie and sausage skillet. Hope you get to do all the things you dream of!

      That skillet looks perfect... I'd totally have it for breakfast, lunch or dinner. (Actually, make that breakfast, lunch AND dinner!)
      BTW, I've done Colour Me Rad twice now, which I hear is basically the exact same thing as Colour Run, only with different organizers. It's a ton of fun! I usually find running kind of boring, but this run is anything but. I was going to do ElectroDash, too (that's the night one with a glow-in-the-dark course and a big dance party at the end), but they cancelled this year's event. 🙁

        You should! Most gyms offer a drop in fee and you can just try one class! You'll be in love with the challenge you'll want to go back for more!

      I like the new look of the blog and the logo! This veggie skillet is so nice to have for a quick dinner idea or even on the weeknight. I have seen photos of people that do that color run and it looks like so much fun!!!
