Bacon Wrapped Cacao Crusted Filet Mignon

Cocoa Rub

  • 2 tbs unsweetened cocoa powder
  • 2 tsp kosher salt
  • 1 tbs freshly ground black pepper
  • 1/2 tsp paprika

For the Bacon-Wrapped Filet Mignon


Instructions

  1. Preheat the oven to 425F. In a small bowl mix together the cocoa powder, salt, pepper, and paprika.
  2. Season the steaks on all sides with the cocoa rub.
  3. Wrap each steak with bacon and secure with some kitchen twine.
  4. Heat a cast iron skillet on medium high heat. Once you see it smoking slightly add the oil, circle it around to coat the pan, and add the steaks.
  5. Sear the steaks for 1-2 minutes per side. Then transfer the skillet to the oven to finish cooking. (6 minutes or until desired doneness is achieved).
  6. Remove the steaks from the oven and transfer to a plate or cutting board to rest for about 8-10 minutes. Also discard the twine.
  7. Serve and enjoy!
