Ingredients

  • 1 tbs avocado oil
  • 2 sweet potatoes, cut into cubes
  • 4-5 small red potatoes, cut into cubes
  • 3-4 small purple or yukon potatoes, cut into cubes
  • 2 green bell peppers, diced
  • 1 red bell pepper, diced
  • 2 jalapenos, sliced
  • 1 red onion, diced
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon of paprika
  • 1/4 teaspoon garlic powder
  • 1 package of compliant chicken sausage, sliced
  • 4-5 eggs
  • sliced avocado for garnish
  • chopped cilantro

Instructions

  1. Preheat oven to 415F
  2. Toss potatoes, peppers, and onion with oil and spices and place on a baking sheet sprayed with cooking oil
  3. Roast in oven until browned (roughly 15-20 minutes flipping halfway through)
  4. Add chicken sausage and make indents to crack the eggs on the pan
  5. Reduce heat to 350 and bake until the whites of the eggs no longer jiggle (5-7 minutes)
  6. Add garnish and serve!
