Sheet pan meals have become my thing. Between commuting over 100 miles a day, house chores, playing with the feather toy with Flynn, and everything in between I have ZERO time for cooking. That’s why I develop meals that work for my busy schedule and share it with you cause I KNOW you guys are busy too!
And this meal is sooooo versatile you can switch it up as much or as little as you want. Sick of eggs? Omit them. Don’t like onions? Omit them. I sometimes swap the peppers for brussels sprouts when it’s winter or swap the sweet potatoes for butternut squash when it calls to me. You do you.
I personally LOVE spicy. And as I mentioned in my previous post, capsaicin is your friend if you want to boost your metabolism and give your daily workout a little extra kick to burn even more calories throughout the day. Adding some cayenne and jalapenos are pretty much a no brainer for me at this point.
If I am going to work out, I want it to COUNT. And by fueling my body with the tools it NEEDS to get to my goal I am all for efficiency.
And being an engineer plus a recipe developer I LOVE creating efficient ways to get MORE out of your food than just answering a growling stomach.
That is the BIGGEST lesson I have learned about myself doing Whole30s and learning about nutrition.
You literally ARE what you EAT.
You can’t meet your goals when your nutrition isn’t on point.

When Jake and I moved to Williamsburg we were forced to move from our beloved Crossfit gym. MISS YOU GUYS!!!! :*(
We joined a new gym here buuuuttttt things weren’t working out. We weren’t being challenged and most days the workout didn’t fit the bill to eat many or any healthy carbs. Thus I ONLY made progress via nutrition alone. I still lost 5+ lbs during this time so it is proven that nutrition outweighs whatever you do in your sweat sesh.
So we decided to make an investment and build our own home gym. BEST DECISION EVER. Now I EARN my carbs 😉
This easy breakfast is PERFECT for Mother’s Day this weekend. It comes together in less than 10 minutes via cutting up fresh vegetables, roasted until crispy in the oven.
By the time you’re done chit chatting and pouring coffee for your mom brunch is done! I love adding sliced avocado and a sprinkling of cilantro for garnish. But please put your own spin on it and add whatever mom wants on it!
If you are not on a Whole30, I HIGHLY recommend adding some light Mexican cheese over top! YUM.
Jake and I plan on bringing my mom to our church on Sunday then having brunch including THIS plus some lox, cucumber slices, tomato slices, and olives. Then spending the afternoon with Jake’s mother and grandmother. There shall be coffee and flowers a plenty.

Whole30 Spicy Sheetpan Breakfast

A medley of potatoes and veggies are tossed with avocado oil, spices and roasted until crispy and caramelized in the oven. Then finished with chicken sausage and freshly cracked eggs. Ingredients
- 1 tbs avocado oil
- 2 sweet potatoes, cut into cubes
- 4-5 small red potatoes, cut into cubes
- 3-4 small purple or yukon potatoes, cut into cubes
- 2 green bell peppers, diced
- 1 red bell pepper, diced
- 2 jalapenos, sliced
- 1 red onion, diced
- 1 teaspoon of salt
- 1 teaspoon of pepper
- ¼ teaspoon cayenne pepper
- ½ teaspoon of paprika
- ¼ teaspoon garlic powder
- 1 package of compliant chicken sausage, sliced
- 4-5 eggs
- sliced avocado for garnish
- chopped cilantro
Instructions
- Preheat oven to 415F
- Toss potatoes, peppers, and onion with oil and spices and place on a baking sheet sprayed with cooking oil
- Roast in oven until browned (roughly 15-20 minutes flipping halfway through)
- Add chicken sausage and make indents to crack the eggs on the pan
- Reduce heat to 350 and bake until the whites of the eggs no longer jiggle (5-7 minutes)
- Add garnish and serve!
- Prep Time: 10 mins
- Cook Time: 25 mins
