These Instant Pot Whole30 Pork Chile Verde Tacos are pretty much my favorite dinner for Taco Tuesday…heck any day of the week. SO SO quick and easy with only 5 ingredients and 30 minutes between you and this healthy Whole30 meal.
I thought I would kick the week off right with some Whole30 goodness. This way you are prepared to make this for Taco Tuesday tomorrow ;).
In case you are just now clicking in here on The Kitcheneer, you maaaayyyyy have noticed that I am on a HUGE taco/burrito/margarita kick recently.
Cause what’s life without tacos?
Seriously. It’s become a problem.
And since I am still living in Cinco de Mayo land from the weekend I figured another taco recipe wouldn’t hurt.
I am really trying to incorporate more of my favorite Whole30 weekly staple recipes that I truly love and enjoy all the time at home. I simply haven’t made them to look pretty for the blog until now: D.
Jake and I are also working VERY hard behind the scenes to make The Kitcheneer bigger and better than it’s ever been. I am excited about these projects and teaming up with brands that I love and use on a daily basis brings me so much joy.
My goal here is to show everyone that cooking is fun, cooking is easy, and can taste amazing even though it’s healthy and made from real wholesome food.
I like to consider myself a recipe engineer as well as my full time systems engineer position.
And man, it is TOUGH maintaining content here on the blog AND working 40+ hours a week being a number crunching nerd. But I LOVE it.
So you have to know I engineer these recipes to fit my healthy lifestyle and with my schedule these recipes are designed to be fast paced, with a small ingredient list, and EASY.
And guys, these Whole30 Pork Chile Verde Tacos COULD.NOT.BE.EASIER.
I used my original Chile Pork Verde recipe as the base and converted it to an Instant Pot version. Meaning the whole pork shoulder roast is DONE in 25 minutes! WINNING.
And if you aren’t familiar with chile pork verde. It is heaven. Savory fall apart pork shoulder in a salsa verde sauce with TONS of garlic. And I LOVE garlic.
And it makes an AMAZING Sunday meal prep option as it only gets BETTER over the next few days.
Simply turn your IP (Instant Pot) on Sauté mode, heat oil, brown pork, and dump salsa verde on top. Switch to Meat/Stew mode on high pressure for 23-25 minutes and seal the lid. DONE.
For the peppers, you can either eat raw or I like to char them just a little bit on the grill before serving.
Taco heaven with a squeeze of fresh citrus, some guac, and cilantro.

- Total Time: 35 mins
- Yield: 6 tacos 1x
Ingredients
- 2-3lbs of pork shoulder or pork loin roast
- 1 jar of compliant Salsa Verde
- 1 tsp salt
- 1 tsp pepper
- 2 tbs avocado oil
- 6 cloves of garlic
- 1 red onion, diced
- 3 bell peppers, halved and grilled for 5-6 minutes
Instructions
- Turn Instant Pot on to Saute mode and heat oil and add onion and garlic to saute until fragrant (3-5 minutes)
- Brown pork on all sides (5 minutes)
- Switch to Meat/Stew mode on high pressure, seal lid, and set for 25 minutes. Twist lever to quick release seal.
- Shred pork with two forks and fill each pepper halve with pork and your favorite taco toppings!

- Cook Time: 25 mins
