These healthy...ish nachos have become one of my favorite things to throw together for a quick weeknight meal or appetizer for family gatherings on the weekends.
A blend of grain free tortilla chips and plantain chips (from Trader Joe’s) LOADED with all the goods. I’m talkin’ caramelized peppers and onions, jalapenos, shredded chicken right off a rotisserie from the store, salsa, avocado and cilantro. So easy and so so good.
And honestly when you think of “nachos” you aren’t thinking it could be a healthy thing right? But that’s what I am here for. To engineer the “healthy” out of foods we truly love and crave.
I chose each ingredient with care and decisiveness.
- Chicken for the obvious good for you protein
- Lots of veggies for your daily allotment
- Avocados for a dose of healthy fats
- Salsa- cause honestly I can’t do nachos without salsa
- A little light Mexican cheese (optional) but it is reduced fat
- Jalapenos because it’s a superfood/metabolism booster
I usually serve mine on a bed of greens to add even more health to this meal. Sort of like a chicken nacho salad. SO GOOD.
And I think these nachos are the perfect mid-week pick me up and made with ingredients that pantry/fridge staples.
Made all on one sheet pan so there is no fuss and this will make the excellent crowd pleaser to serve on Memorial Day weekend as a snacky appetizer while the burgers and hot dogs are sizzling on the grill with a cold marg in your hand.

Ingredients
- Tortilla Chips
- Plantain Chips
- 1-2 cups of shredded chicken
- 1 bell pepper, sliced
- 1 red onion, sliced
- 1 jalapeno, sliced
- ½ avocado, sliced
- ¼ cup light Mexican cheese
- ¼ cup salsa
Instructions
- Preheat oven to 415F
- Add enough chips to cover a parchment covered sheetpan
- Top with chicken, peppers, and onions
- Bake in oven for 15 minutes
- Top with cheese and jalapenos and bake for an additional 5 minutes
- Serve with sliced avocado, lime wedges, and cilantro!
