Made with shredded rotisserie chicken with roasted peppers and onions over a bed of grain free tortilla chips. This sheet pan meal couldn’t be easier or healthier than getting nachos at a restaurant or at the ball park. Bonus? It’s healthy AND done in less than 20 minutes!

- Tortilla Chips
- Plantain Chips
- 1-2 cups of shredded chicken
- 1 bell pepper, sliced
- 1 red onion, sliced
- 1 jalapeno, sliced
- 1/2 avocado, sliced
- 1/4 cup light Mexican cheese
- 1/4 cup salsa
Instructions
- Preheat oven to 415F
- Add enough chips to cover a parchment covered sheetpan
- Top with chicken, peppers, and onions
- Bake in oven for 15 minutes
- Top with cheese and jalapenos and bake for an additional 5 minutes
- Serve with sliced avocado, lime wedges, and cilantro!
