Sheetpan Shredded Chicken Nachos

Made with shredded rotisserie chicken with roasted peppers and onions over a bed of grain free tortilla chips. This sheet pan meal couldn’t be easier or healthier than getting nachos at a restaurant or at the ball park. Bonus? It’s healthy AND done in less than 20 minutes!


Ingredients

Scale
  • Tortilla Chips
  • Plantain Chips
  • 1-2 cups of shredded chicken
  • 1 bell pepper, sliced
  • 1 red onion, sliced
  • 1 jalapeno, sliced
  • 1/2 avocado, sliced
  • 1/4 cup light Mexican cheese
  • 1/4 cup salsa

Instructions

  1. Preheat oven to 415F
  2. Add enough chips to cover a parchment covered sheetpan
  3. Top with chicken, peppers, and onions
  4. Bake in oven for 15 minutes
  5. Top with cheese and jalapenos and bake for an additional 5 minutes
  6. Serve with sliced avocado, lime wedges, and cilantro!
