Almond Butter Blueberry Chia Granola Bars. Easy pantry staples such as dried blueberries, chia seeds, gluten free oats, almond butter, coconut oil, and honey are all mixed up to form these great on the go bars. These granola bars are not your average ones as they are meant to be chilled! Meaning, perfect summer snack to cool off with while getting loads of superfood goodness!

Ingredients

  • 1 cup of almond butter
  • 1/3 cup coconut oil
  • ¼ cup honey
  • ½ cup dried blueberries
  • ¼ cup chia seeds
  • 2 ¼ cup of gluten free oats

Instructions

  1. In a small sauce pan over medium low heat, melt coconut oil, honey, and almond butter while stirring. (about 3-5 minutes)
  2. In a mixing bowl add oats, chia seeds, and dried blueberries
  3. Pour in the almond butter mix and stir until combined
  4. Line a 9x13 baking pan with parchment paper and press the mixture into an even layer
  5. Chill in fridge for 30-45 minutes
  6. Slice into 12 pieces and enjoy
