    Today is actually my birthday! I had intended to write/publish this post earlier this week. But life happens and it got pushed to today. I can’t believe I am entering my final year in my twenties! GAH! Well, I pretty much have been acting like a 40 year old so far so I guess that makes me younger??? I mean I love going to the grocery store, getting a good workout in before 5 AM, bed before 9PM, and I am a true homebody.

    I actually have NO clue what I am doing today other than my morning workout (got to earn my birthday dinner right???). I pretty much workout for carbs. Lol I’m typing this up Wednesday evening so I can be completely off today! No social media. Just me and the hubs enjoying a day off! Still excited to know what we will be doing though! 😀

    We actually had the opportunity to go to the new Earth Fare’s grand opening here in Williamsburg! It was AMAZING and I can’t wait to tell you all about why you will love them too in a later post. Stay tuned!

    But for now, let’s bring the focus back to these granola bars that Jake and I and our neighbors are in LOVE with.
    With it being almost JULY I wanted to bring something sweet that wasn’t ice cream but still perfect for warm weather.
    Enter these CHILLED superfood packed granola bars.
    I actually made these with Jake in mind. He loves granola bars. Especially these.

    Almond Butter Blueberry Chia Granola Bars.     He gets more healthy fats in his diet so I pack a couple of these in his work lunch to take during the week. They also make fantastic post workout meals!
    And they could NOT be any easier to make.
    Just melt the almond butter, coconut oil, and honey in a sauce pan
    Mix together with oats, chia seeds, and blueberries
    Then chill, slice, devour!
    SO easy and perfect for summer, road snacks, and for your beach cooler!

    Ingredients

    Scale
    • 1 cup of almond butter
    • ⅓ cup coconut oil
    • ¼ cup honey
    • ½ cup dried blueberries
    • ¼ cup chia seeds
    • 2 ¼ cup of gluten free oats

    Instructions

    1. In a small sauce pan over medium low heat, melt coconut oil, honey, and almond butter while stirring. (about 3-5 minutes)
    2. In a mixing bowl add oats, chia seeds, and dried blueberries
    3. Pour in the almond butter mix and stir until combined
    4. Line a 9x13 baking pan with parchment paper and press the mixture into an even layer
    5. Chill in fridge for 30-45 minutes
    6. Slice into 12 pieces and enjoy

      Can you use fresh blueberries?

        You can dry fresh blueberries in the oven at a low temp. But I wouldn't recommend fresh as they would add too much moisture to these bars.
