Skillet Peach Basil Chicken with Bacon and a Balsamic White Wine Sauce - simple and easy crowd pleasing that pairs perfectly with serving over a salad or cauliflower or real rice!


Ingredients

Scale

1.5 lbs of chicken breast

3 slices of bacon

1 tsp of salt

1 tsp pepper

2 tbs almond flour (or regular flour)

1 tsp smoked paprika

Juice from 1/2 lemon

2 tbs balsamic vinegar

2 tbs fresh rosemary

4 peaches, quartered

1/2 cup of white wine

1/4 cup of chopped basil


Instructions

Preheat oven to 425F.

In a large skillet, cook bacon on medium high heat until cooked through. Set aside on paper towels.

Mix the flour and seasonings together then season the chicken with the flour mixture.

In the same skillet add the chicken. Brown on both sides for about 3-5 minutes per side (depends on how thick the breast is)

Add the wine, rosemary, and vinegar.

Allow to simmer for 10 minutes

Add the peaches to the skillet and roast/caramelize in the oven for another 8 minutes.

Add the basil and serve!
