      Crispy, Saucy, Peachy Skillet Chicken WITH bacon to help kick off all the summer flavors!

      It's been VERY inconsistent here on the blog and I am very determined to maintain a better schedule!.

      To be honest, I hit really bad writer's block while trying to navigate the inward crazy paths in my mind to alter my behavior around food. (Koda's expression captured my feelings PERFECTLY!)

      I rejected diet culture in the sense of the misguided food information that's plagued our system, who have profited off of us not knowing any better, and destroyed our ability to eat intuitively based off our own natural body cues. AND COMPLETELY RUINED OUR BODY IMAGE to something that is completely unrealistic. Sooooo... that's the deep dark part of my brain that I forced myself to look at. To take a harder look at myself. To ask tough questions about my habits around food.

      Which brings me to my recipe development process from here on out. I believe that eating whole, clean. REAL foods are what's best and through my Whole30 journey I have discovered the foods that I can tolerate and ones I cannot (or at least make me feel uncomfortable). Example: soy sauce and most beans.

      Hence, why you might see other recipes here that aren't Whole30 or tailored to a specific diet. But tailored to be well portioned and made with REAL ingredients that are either not processed or at least minimally processed. Plus made with some kitchen efficiency 😉

      I love one skillet dishes. Like this chicken!

      The combo of the rosemary with a white wine pan sauce with chicken that has been coated with almond flour and a blend of seasonings to make it extra crispy and flavorful!

      The peaches are thrown in after the chicken browns and crisps a bit. Oh, and did I mention that we are cooking all this in the SAME pan that we are cooking bacon in?! Talk about elevating the flavor EVEN MORE.

      In short, the peachy- basily- crispy- bacon- easy dinner is a keeper and company worthy but is also easy enough for a week night!

      Serve over cauliflower rice, on top of a salad, or eat right out the pan.

      Description

      Skillet Peach Basil Chicken with Bacon and a Balsamic White Wine Sauce - simple and easy crowd pleasing that pairs perfectly with serving over a salad or cauliflower or real rice!


      Ingredients

      Scale

      1.5 lbs of chicken breast

      3 slices of bacon

      1 tsp of salt

      1 tsp pepper

      2 tbs almond flour (or regular flour)

      1 tsp smoked paprika

      Juice from ½ lemon

      2 tbs balsamic vinegar

      2 tbs fresh rosemary

      4 peaches, quartered

      ½ cup of white wine

      ¼ cup of chopped basil


      Instructions

      Preheat oven to 425F.

      In a large skillet, cook bacon on medium high heat until cooked through. Set aside on paper towels.

      Mix the flour and seasonings together then season the chicken with the flour mixture.

      In the same skillet add the chicken. Brown on both sides for about 3-5 minutes per side (depends on how thick the breast is)

      Add the wine, rosemary, and vinegar.

      Allow to simmer for 10 minutes

      Add the peaches to the skillet and roast/caramelize in the oven for another 8 minutes.

      Add the basil and serve!

        Hi! This looks delicious. When do I add the bacon back in the skillet? Before or after it goes in the oven to finish?

          Add the bacon after as the bacon should already be cooked. 🙂 I will update the instructions to make this step clearer. Thank you for catching this!
