Description

Whole30 Air Fryer Buffalo Chicken Meatballs are simply seasoned with Buffalo flavors, crisped in the air fryer, and tossed in buffalo sauce. Serve as a party appetizer, after school snack, over a bed of greens, in a lettuce wrap, or over a bowl of cauliflower rice. The variations are limitless!

Ingredients

Scale

For the meatballs

  • 2lbs of ground chicken
  • 1 tsp kosher salt
  • 1 tsp ground black pepper
  • 2 tsp of garlic powder
  • 1 tsp onion powder
  • 2 tsp chili powder
  • 1 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1/3-1/2 cup of buffalo sauce

Instructions

  1. In a large mixing bowl, combine chicken with all of the seasonings.
  2. Roll meatballs into 1-2" balls. Grease the air fryer basket thoroughly with cooking spray (I use coconut oil spray from Trader Joe's).
  3. Place meatballs in basket and cook at 350F for 20-25 minutes or until an internal temp is 165F
  4. Toss meatballs in buffalo sauce and serve!
