Description

Simple Smashed Avocado Toast with grated egg is the tastiest and healthiest way to up you brunch menu. Whole grain toast slathered with smashed avocado, layered with fresh veggies, and a grated hard boiled egg on top will be your new favorite breakfast! 


Ingredients

Scale
  • 1 slice of toasted whole grain bread
  • 1/4 of an avocado, smashed with a fork
  • 1 tbs lemon juice
  • Pinch of salt
  • Pinch of red pepper flakes
  • 1 hard boiled egg

Topping Ideas

  • sliced radishes
  • sliced cucumbers
  • sliced tomatoes
  • sliced red onion
  • everything bagel seasoning
  • Trader Joe's Chili Onion Crunch Oil 
  • Broccoli Sprouts

Instructions

  1. In a small bowl, smash avocado. Stir in lemon juice, salt, and red pepper flakes. 
  2. Slather smashed avocado mixture on toasted slice of whole grain bread. Top with your veggies of choice.
  3. Using a grater or zester, gently grate the hard boiled egg on top of the toast.*
  4. Add broccoli sprouts and chili oil (if using) and serve! 

Notes

* PRO TIP - Grating the hard boiled egg works best if the egg is cold. Recommend making the hard boiled eggs in advance to prep for this recipe or as a grab and go snack!
