Ingredients

Adjust Servings:
1-2 tbs olive oil
3-4lbs Short Ribs
Salt & Pepper
1 Yellow Onion Diced
2 Garlic cloves Minced
1 Pie Pumpkin Cut into small chunks or 1 can or pumpkin puree
1/3 cup Chicken Stock
Pinch Pomegranate Seeds For garnish

I absolutely adore working out in the fall. It’s a real game changer. I am usually taking my jacket off 20 minutes in and the cool air feels SO good on my skin.

This recipe just screams fall.

The short ribs are amazingly tender fall-off-the-bone crazy good.
Plus its slow cooked all day with pumpkin.

Which is then turned into PUMPKIN MASH!

Usually short ribs go great on top of mashed potatoes or rice. But I decided this dish NEEDED some pumpkin. So I made pumpkin mash instead.

Pretty genius if I do say so myself. 😉

The raw pumpkin goes at the bottom of the crock pot with a little chicken stock then the browned short ribs are added and slow cook all day long. The drippings from the ribs are absorbed into the pumpkin and my husband Jake LOVED it.

I have to share this; Jake is a true meat and potatoes guy and when I told him that the pumpkin tasted like the rib drippings he took a spoonful and said, “Wow! That is some great pumpkin meat sauce!!” I busted out loud laughing and now it’s on the internet.

But I think I might just make pumpkin mash all season long. It really is a great potato/cauliflower mash replacement!

Really, this meal is the total package for an easy fall dinner.

Instant Pot Instructions

Press Saute on the Instant Pot

While it’s heating up chop up your onion, garlic, and pumpkin

Season the short ribs with salt and pepper
Add oil to the Instant Pot and add the short ribs to brown**
** You can choose not to brown the ribs, but it's just not the same!!! I highly recommend it!**

Brown ribs for roughly 2 minutes per side
Remove ribs from Instant Pot and set aside

Add pumpkin to bottom of the pot with the chicken stock, onion, and garlic

Add the short ribs on top

Switch the Instant Pot setting from Saute to Slow Cook
Cook on low for 8 hours or high for 5-6 hours or on low for 6-8 hours

Once the short ribs are done, lightly shred the ribs and remove and discard the bones
Set ribs aside

With an immersion blender or regular blender, blend pumpkin mixture until smooth

To Serve

Divide the pumpkin mash into bowls and top with rib meat and pomegranate!

Crockpot Instructions

Heat a large heavy bottom skillet over medium high- heat. Add ribs to the skillet and sprinkle with salt and pepper to season. Brown ribs on all sides for roughly 2 minutes per side.

Remove ribs from skillet.

While the ribs sear, chop the onion, garlic, and pumpkin.

Top with browned ribs and cook on low for 8 hours or high for 6 hours
