I want to catch up on some of the breakfasts and lunches that I have posted on my Instagram account ( link at bottom of page) and share them with you!
I've been kicking it up a notch on my workouts and lets just say it's been a very sore week so far! Lots of strength training and isolating a body part for each day really helps me out instead of doing a total body workout.
I've also really been into simple, throw- it- together meals, which makes busy days much better!!
Here are some of the breakfasts I have been into the past couple of weeks:
- 1 egg & 3 egg whites
- salt and pepper
- siraccha ( is this how you spell it?) sauce 🙂 ( first time using it to see what the fuss was about - it's ok. Maybe I'll try it with something other than eggs next time)
I paired it with a Greek yogurt and a blood orange
This is definitely a new favorite for me!! Hard boiled egg whites mixed with avocado on top of a whole wheat bagel thin and berries!
- 3 hard boiled egg whites
- 1 serving of avocado ( about 2-3 tbs)
- salt and pepper to taste
- 1 teaspoon light mayo ( optional)
- 1 cup berries
Avocado Toast & Egg Whites
- 5 egg whites
- Mrs. Dash seasoning
- 1 slice whole wheat toast
- avocado to spread on top! 🙂
Easy peasy breakfasts!!!
Here are some lunches/ dinners:
Zucchini Noodles with Marinara Sauce and shrimp!
I had this like 3 times last week it was SO good!!
You need:
- 2 small zucchini ( spiralized)
- ½ cup organic marinara sauce ( I used Muir Glen tomato basil) or you can used home made
- 5-6 cooked shrimp
- 1 clove minced garlic
- 1 tbs shredded Parmesan
- 1 teaspoon olive oil
Directions:
In a sauce pan heat oil and garlic until garlic starts to brown then add shrimp and sauce and stir occasionally for about 3 minutes.
Add zucchini and stir until thoroughly mixed and covered with sauce. Cook until zucchini softens ( 2-4 minutes)
Serve in bowl and top with cheese.
I made this last night and it was AMAZING! We usually do "Meatless Mondays" and I love the Gardein brand meatless chickn. I put the chickn on a bed of spinach with strawberries and almonds. For dressing use an oil based dressing 🙂 I used Brianna's blush vinaigrette.
