Although I am an Autumn girl at heart, I absolutely love this time of year for all the beautiful fresh fruits and vegetables!! One of Jake and I's favorite things to do on the weekend is to get up early and walk to our local farmer's market! Fredericksburg has one of the best farmer's markets I have ever seen! This past weekend was my birthday ( I can't believe I am 25!!!) and we started off by picking up some goods at the market! The strawberries looked gorgeous and I couldn't resist! I also bought some more yellow zucchini and green tomatoes!
It just so happens that my amazing husband got me a new food processor for my birthday and I knew what to make with my strawberries! A salsa! I gathered basil from our garden, added strawberries, red onion, and jalapeno to spice it up! It was SO good!
I seared up some chicken breasts and ladled on the salsa on a bed of spinach! It was amazing and it might be my new go to dressing for my salads for a while! It would also pair well with some pita chips as an appetizer or a great dish to bring to a party!
Strawberry Basil Salsa
You Need:
- 1 package of strawberries sliced in half
- ¾ of an onion cut into quarters
- 2 jalapenos sliced lengthwise with seeds removed
- 2 tbs honey
- ¼ cup of balsamic vinegar
- ¼ cup of fresh chopped basil
Directions:
In a food processor or blender combine basil and jalapenos first, then add onion and strawberries.
In a medium sized bowl, pour strawberry mixture into it and add honey and vinegar.
Toss to coat the fruit and veggies thoroughly.
Let the salsa ferment in the fridge for 20 minutes.
