Are you ready for this? Prepare to drool.
I made this sandwich with your guy in mind ( not to say I don't love it just as much or more!). This sandwich is loaded and full of the things your man loves.
And get this. This lunch is to go. Yup, he will be the envy of the office when he busts this baby out. Your coworkers will either ask you where you got it or commence evil green glares.
It also incorporates the "H" word (healthy) that a lot of guys are turned off to. Some are so bad that even the mention of this word will make him turn his nose up at the food entirely. Trust me, I have witnessed this. Trick is, just don't tell him! He will NEVER know! Muwhahahaha. And this is a great way to cram in some veggies and protein in his diet.
I know I have mentioned Laptop Lunchboxes before, but I always had the impression that they only had lunchboxes for women or kids. That is SO not the case. They have choices for your guy too! My husband LOVES his and loves that he doesn't have to take little plastic baggies anymore! He also takes his breakfast with him everyday so the extra room in this lunch bag is perfect for the extra and most important deal of the day!
So, save your guy from take out from those nasty fast food places and make him something he will want even more.
We are garlic lovers in this house! Most of my recipes I usually start off with mincing garlic and tossing it in the pan, or blending it in my soups, or roasting it. Wait until you see how much garlic is in the actual roast I used for this sandwich! But it is SO worth it.
I made my favorite roasted beef in the oven ( the recipe I will post later darlings), sliced thin, sauteed peppers and onions, and of course topped it with ooey gooey cheese. To enclose this beast I rubbed garlic on the inside of the bread and toasted it in the oven to seal in the flavor.
Serves 1 ( Nutritional Info based on My Fitness Pal App and is subject to vary depending on what cheese and bread you use)
You Need:
5 oz sliced roast beef ( or use leftovers from a roast you made earlier in the week)
1 teaspoon of olive oil
¼ red bell pepper sliced into strips
¼ green bell pepper sliced into strips
¼ onion chopped
3 garlic cloves ( grated)
1 slices of reduced fat provolone cheese
1 whole wheat hoagie roll
Directions:
Heat oil in skillet on medium heat
Add peppers and onion and saute for 7-8 minutes or until vegetables are softened
Preheat oven to 300 degrees
Rub grated garlic on the insides of the bread and place in oven for 5 minutes or less ( keep an eye on it as you don't want it to burn!)
Stack your sandwich: start with beef, cheese, peppers and lastly onions. You can also add mushrooms or customize it to your guy's desire. Trust me he will appreciate it!
Now, put it back into the oven to make the cheese gooey. Let cool some and slice in half and place in lunch box!
I served Jake's sandwich with a side of a crisp Granny Smith apple, and some BBQ chips ( I used Pop Chips) !
