    Wholly Guacamole!!! Guac Tuna Salad

    guac tuna salad
Happy National Guacamole Day!! ( well it's tomorrow, but I wanted to get a head start!)

It is indeed a day to celebrate, and as America's favorite health food the almighty avocado, I have a surprise giveaway brought to you by Laptop Lunches and Wholly Guacamole!

Me and the avocado didn't always get along. I think I had a rotten one in a salad at a restaurant once and I was turned off to it for awhile. It wasn't until I tried guacamole for the first time years later that I went head over heels for it!

And then while grocery shopping one day I spotted these cute cups of guacamole for snacking and had to try it! I have loved Wholly Guacamole ever since! It's great for lunches and a healthy snack for after work or school!

I have found other amazing uses for the wonderful avocado. I have used it in desserts, salads, pesto, and of course in my tuna salad.

This is one of my go to meals for when I really don't feel like cooking. It's easy, you get another healthy fat in for the day and of course packed with protein! ( my favorite!)

You can top your salad with this tuna salad, in your sandwich, or my favorite stuffed in a pita bread with lots of veg!

You can make this ahead of time in bulk and just scoop it out to put in your pita before work/school everyday!

    guac tuna salad 2

    Serves 2

    You Need:

    2 tbs Wholly Guacamole

1 can of tuna in water

    1 teaspoon of garlic powder

2 tbs of non fat Greek yogurt

    2 tbs chopped scallions

    3 tbs chopped celery

    2 pita bread

    Romaine lettuce

    Sliced Tomato

    Directions:

In a medium sized bowl, mix tuna, garlic, black pepper, guacamole, yogurt, scallions, celery, and red onion thoroughly

Stuff pita with lettuce and tomato and top with tuna salad

    Enjoy!

Now, back to the giveaway. Laptop Lunches and Wholly Guacamole have teamed up to give one of my readers a cooler filled with Wholly Guacamole products as well as an Avocado Bento Box! How awesome are they? I can tell you. Very.

I will tell you how awesome Wholly Guacamole is. This year to celebrate National Guacamole day, they are starting a campaign to get people to go out and give acts or random kindness. I LOVE it. I am a big advocate for helping out people even in the smallest way. And I want you to #guacitforward by going out and being kind to someone or an animal. Here are some ideas to #guacitforward:

    • Volunteer at a soup kitchen
    • Volunteer at an animal shelter ( I do this and it is SO rewarding giving love to animals who normally don't get any)
    • Smile at a stranger
    • Give someone a compliment ( it could make their day!)
    • Bring healthy snacks to the office
    • Start a exercise group in your neighborhood to promote a healthy lifestyle
    • Open doors for the elderly

It can be a small gesture or a large gesture! I love this!

    Giveaway Deets:

o 1 Set of Avocado Bento Buddies
o 3 Guacamole Trays (various flavors)
o 2 mini cups (various flavors)

Here's the thing: I LOVE avocados, love guacamole, but it triggers my gag reflex! I eat it anyway. I love this recipe!

I love those little guac packages. I am the only one who likes guac in my house so if I open a big container, I've got to eat the entire thing (poor me, ha!). I use these for toppings on my veggie burgers all the time, just enough!

No Way! Our friends from Israel always make guac tuna salad and my son once in awhile requests it. 🙂 Yum.
