    Crockpot Lemon Rosemary Whole Chicken

    I am all about my crock pot this week! I have been thinking about this chicken long after the leftovers were gone. It was that good. I love my traditional roasted chickens but if you really don't have the time, this is my cheater's chicken. 

    It tastes like you have been slaving over a stove all evening but in reality you are still binge watching the Gilmore Girl's sipping a glass of wine after a long day at work. 🙂 No one has to know.

    It definitely doesn't get much easier than this chicken. I literally put the chicken in the crock pot, seasoned, and flavored and walked away and let my house smell of lemons.

    The leftovers are also a plus. Can you say shredded lemon rosemary chicken sandwiches? Or top it on your salad? YUM

    Give yourself a break this week by putting this bird in the slow cooker and let it simmer in it's own juices with fresh lemons and rosemary.

    You Need:

    1 roasting chicken ( 2-3 lbs)

    2 lemons (1 halved and 1 sliced thin)

    3 tbs of freshly chopped rosemary

    salt and pepper to taste

    1 teaspoon of paprika

    Directions:

    Place chicken in crockpot

    Rub with salt, pepper, and paprika on chicken

    Squeeze 1 lemon over chicken

    Place lemon slices over top of chicken

    Press rosemary so that it sticks to the bird ( it will absorb the flavor better)

    Set slow cooker on high for 5-6 hours or low for 8-10 hours.

    Slice into the bird to ensure it is cooked thoroughly and serve!

      I'm all about easy recipes...never thought of using a whole chicken in the slow cooker! Does the chicken need to be defrosted or can it be placed in the slow cooker when frozen? 🙂

        Lori, I would go with at least a 3/4 of the way defrosted chicken. Definitely don't want an undercooked bird!

      I am all about my slow cooker right now too. It makes getting dinner on the table such a breeze on busy nights (and gives hope that we might be able to hit the local pool after dinner too!).

      I just bought a roasting chicken yesterday and I was thinking this morning that I really wasn't wanting to turn on the oven in our house today - problem solved with this fantastic recipe! 🙂 Thanks for sharing!

      My slow cooker is probably my favorite kitchen tool and rosemary is my favorite herb, so you *know* I'm going for this recipe! Very good!

        I highly recommend it! We like the white meat and it came right off the bone! And plenty for sandwiches throughout the week!

      Nice. I love the angle of the bird in the snapshot. I question myself now why don't I use a crockpot? The flavors here a freshly delicious!
