    Jack Skellington's Pumpkin Screamer Cake

    "Boys and girls of every age wouldn't you like to see something strange? Come with us and you will see this our town of Halloween. This is Halloween, This is Halloween Pumpkins scream in the dead of night..." 

    Halloween is just around the corner and it's just in time to introduce to you my second installment of my Disney series! I love Jack and Sally's love story and have seen this movie many many times.

    I can guarantee Jack Skellington would scare the pants off of you if you tried taking a bite out of his cake. In fact he told me so last night when Jake and I took our first haunted tour of Williamsburg,VA and got to witness some pretty scary stuff outside the Peyton Randolph house which is the most haunted house in the East Coast! The two left windows that appear to be glowing have no source for that light...eerie.

    Also, if you turn sideways and look at the top left corner of the window I think you can see the town's doctor in his white coat looking out. The tour guide said he likes to do that often and can only be captured by camera. I am not sure if I believe in ghosts...but that's spooky!

    Back to Jack's cake. This cake couldn't get any simpler even if I tried. It is absolutely perfect to take to a Halloween party or to take to your kid's classroom.  Stop at one slice...if you DARE.

    What's also great about this cake is that it's lightened up and I omitted the oil and eggs and replaced it with pumpkin! Much better! 

    Jack Skellington's Pumpkin Screamer cake will leave you screaming for more because it's soft sponge, oozing chocolate, and of course infested with pumpkin flavor!

    Makes 6 servings

    You Need:

    1 box of sugar free yellow cake mix

    ¼ teaspoon nutmeg

    1.5 teaspoon pumpkin pie spice

    1 tbs cinnamon

    1 can of pumpkin puree

    ⅓ cup of dark chocolate frosting ( portioned in half)

    Directions:

    Preheat oven to 325 degrees

    Mix cake mix with spices and pumpkin until smooth and no lumps remain

    Spray a bundt pan ( i bought a pumpkin shaped one from Homegoods I think they sell them on Amazon as well too) with cooking spray

    Pour batter in both sides of pan evenly

    Bake for 40 minutes or until fork comes out clean

    Let cool for 15 minutes

    Cut bottoms off cake ( about ½ an inch)to make two flat surfaces

    Spread half of the frosting on both sides of cake and sandwich both side together

    In a glass measuring cup microwave remaining frosting until liquid ( about a minute)

    Let cool for a few minutes then pour over the cake

    Let frosting dry 

    Enjoy!

      Oh, I love that movie!! I watch it every year with the kids as part of our yearly Christmas movie binge watch! I need to get a set of pumpkin pans. This cake is adorable! P.S. House is dang spooky! I wouldn't sleep for days if I visited.
