    Steak is one of those proteins I don’t like to mess with too much. As in seasoning. Usually a little S&P and it’s good to go.
    I was feeling unusually creative this week and decided to create a simple rub for my steak before grilling it. I used some of this ancho chili rub spice I found at Target the other week. It definitely brings the additional heat I wanted out of this steak! And while it grilled the spice gave it a smoky flavor we both loved!
    Grilling has become our new favorite cooking method this summer ever since investing in a gas grill. I LOVE IT! It’s so easy to just flip on the gas, then light it, let it pre heat a few minutes while I chop veggies, and voila! It’s ready to load up with protein and veggies!
    I have been INCREDIBLY busy this past month! I feel like I don’t have time for anything but work, working out, meal prepping, and sleeping. And on top of that I broke my foot 2 weeks ago. I was rope climbing at the gym during our WOD (workout of the day) and I was SO happy I actually was climbing the rope instead of just staring at it and expecting to levitate to the top somehow. I lost my footing on the last one I did and tried to land on my left leg and my foot rolled. Bummer. But I continued the WOD and limped around on it for a couple of days. I was in denial that it was broken. I thought if I could walk on it, that it couldn’t be broken. But sure enough, X-rays don’t lie. So I am stuck in one of those special post-op sandal things for 4 weeks! WOO HOO! I am just happy I can still go to RARE Crossfit. I just modify EVERYTHING to suit my injury. It’s very frustrating having to side line yourself due to an injury. I get restless and I want to push more but I know I shouldn’t. It’s a tug of war in my mind.
    Back to steak. Mmmmm steak….drool. I learn my humor from cartoons. SO yea.

    This ancho chili rub is SO good! And would work on most proteins! Especially chicken! You can dress up this steak as much as you want, or keep it simple and have a palm sized portion over some mixed greens, avocado chunks, and some grilled veggies on the side. Another option is to make this fajita style and serve it in a taco with salsa, black beans, corn, and grilled veggies. Either way it’s awesome!

     

    Ancho Chili Rubbed Steak
    Recipe Type: Dinner

    Cook time: 12 mins
    Total time: 17 mins
    Serves: 4 portions
    Ingredients
    • 1 flank steak 
    • Ancho Chili Rub:
    • 1 teaspoon of sea salt
    • 1 tbs of ground black pepper
    • 1 tbs of ancho chili powder
    • 1 teaspoon paprika
    • 1 teaspoon onion powder
    Instructions
    1. Preheat grill to 350
    2. Mix all seasonings together in a small bowl
    3. Rub thoroughly on both sides of steak
    4. Place steak on grill and cook about 5-6 minutes per side or until desired doneness
    5. Let steak rest for roughly 10 minutes before slicing (this seals in the flavor!)
    6. Cut into equal portions and enjoy!
    Serving size: ¼ of steak Calories: 175 Fat: 7g Carbohydrates: 1.2g Sugar: .1mg Sodium: 633mg Protein: 24.2g

    1 flank steak (mine was 2 lbs)
    Ancho Chili Rub:
    1 teaspoon of sea salt
    1 tbs of ground black pepper
    1 tbs of ancho chili powder

    Directions:
    Preheat grill to 350
    Mix all seasonings together in a small bowl
    Rub thoroughly on both sides of steak
    Place steak on grill and cook about 5-6 minutes per side or until desired doneness
    Let steak rest for roughly 10 minutes before slicing (this seals in the flavor!)
    Cut into equal portions and enjoy!

      I'm so sorry to hear about your foot! Crossing my fingers for you that it heals quickly. There is something about a really good grilled steak that makes me feel as though all is right with the world. This recipe looks like it would fit that bill!

      My husband feels the same way about steaks! He says a little salt and pepper or a rub is all you need. Oh no about your foot! I'm a huge baby and I probably would have laid on the gym floor crying like a 2 year old haha. Hope it heals up quickly!

      Holy cow....you're still working out with a broken foot. You go girl! I would certainly use that excuse for months so I could just binge watch netflix all day long. Love the steak recipe, simple is certainly the best in my book!
