    Loaded Chili Stuffed Sweet Potatoes

    Wednesdays are always in need of that super hero meal. And it just so happens I have one for you!

    Remember on Monday when we discussed at length the best Paleo Classic Beef Chili? Well, if you made it this week you’re in luck because I have a great way to turn those leftovers into a new dish that requires like no work whatsoever!

    This meaty, veggie-filled potato is fully loaded and will leave you completely satiated until your next meal. Guys, I love sweet potatoes. Like really love them and especially during a Whole30, they are literally my best carby friends.

    I have been using sweet potatoes as my “buns” in many ways since going primarily paleo. And when I discovered how flipping good they were stuffed with chili. Sold. I even eat this for breakfast. Especially when you’re egg-sick; this is a nice switch up.

    And I promise it is super easy. Almost too easy, which is why I delayed posting this for so long.

    Bake a sweet potato. Done.

     

    WHAT?!

    And if you get super lazy (like me) or just don’t have the time? I simply nuke it in the microwave for a few minutes, and ladle on that spicy, meaty (not-beany) chili over top and add a few extra slices of jalapenos. Because the spicier, the better.

    Trust me.

    Loaded_Chili_Stuffed_Sweet_Potato8Make this chili on a Sunday while watching the game. You can because it’s in the slow cooker and doesn’t need a baby sitter.

     

     

     

    Then bake some sweet potatoes to load up with the good stuff the next day for lunch. Or serve this as the main course at your next game day party.Loaded_Chili_Stuffed_Sweet_Potato10
