Because every weekend needs a good poke bowl.
Seriously. If you have been following me for awhile on Instagram, you KNOW i love a poke bowl on a Friday or Saturday night. Because....who wants to come home after a full week of work and cook?!
NOT ME
That's why poke bowls are perfect. They require NO COOKING and very little prep.
I picked up a bag of cauliflower rice, prepped mango, and a cucumber at Trader Joe's on my way home the other day and assembled this beauty.
I mean, I AM VERY PLEASED with how these pictures turned out!

The most frequent question I have received on this dish is: WHERE DO I BUY SUSHI/SASHIMI grade fish?
- your local fish market is your best bet. The fish is very fresh and you can actually talk to a human being to confirm the grade of the fish
- I have found sushi grade fish at my local The Fresh Market and Wegmans and Earthfare I just went up to the seafood counter and asked.

The salmon is WILD CAUGHT and is delivered to your door frozen (which helps ensure that if there was any bacteria - being frozen killed it) and I contacted them myself to give myself that peace of mind.
The marinade is the perfect combo of citrus and spicy. It flavors the fish and the bowl itself SO much. Then the rest is assembled in less than 5 minutes.
Friday night dinner: DONE.

Ingredients
1 fillet of salmon or tuna (ensure that it's sashimi/sushi grade - aka safe to consume raw!) or use smoked salmon, cooked chicken, shrimp...etc.
⅓ cup coconut aminos
¼ cup compliant orange juice
Compliant Wasabit
1 packet (2tbs) Tessemae's
FOR THE BOWL:
Cauliflower Rice (cooked or raw)
Diced Cucumber
Diced Mango
Diced Pineapple
Diced Red Onion
Green Onion
Shredded Carrots
Snap Peas
The options and versatility are endless!
Instructions
- Fillet fish (if not already)
- Dice fish into small cubes
- In a small bowl, stir together coconut aminos, orange juice, wasabi, and avacado ranch dressing and marinate the fish for 10-15 minutes
- Assemble bowl! Use as many or as little fruit/veggies as you like! It's your poke bowl!
