    Fruit Honey Ricotta Bowl

    Ok, I am beginning to LOVE breakfast. I always hated it. To me breakfast meant eating before my stomach was awake yet! I am not much of a morning person which is why I NEED coffee everyday sometimes more than 1 cup. But anywho, I have been experimenting with different recipes to see what else is out there. I wanted something light since I just got back from my morning workout. And this happened. Creamy ricotta cheese with fresh strawberries,blackberries, and blueberries. With a drizzle of local pure honey and sprinkled with pistachios for texture and healthy fat. It felt like dessert and probably could be used as one. But who says you can't eat dessert for breakfast? It tastes sinful. But don't worry....cause it is under 300 calories!!!

    Serves 1:

    You will need:

    • ½ cup of fat free or part skim ricotta cheese
    • ½ cup of fresh fruit of choice berries worked well with this but you could use chopped apples, figs, peaches, I would choose seasonal fruit!
    • 1 tbs of pistachios
    • 1 tbs of pure honey

    In a bowl, scoop the ricotta into it. Top with berries and pistachios then drizzle with honey! SUPER easy right? And this breakfast is totally portable if made ahead for all you working really early in the AM. I would pack the ricotta and fruit together and put the honey into a separate container to pour on when you need it. I am a big believer that most things are portable if you pack appropriately! It's always worth it to have healthy meals all day no matter where you are!
