    Coffee Chocolate Fix Parfait

    If you are anything like me, you NEED coffee in the morning. I am one of those that " don't have complete sentence structure or much thought" until I have my one cup for the day. I am also the one who will pour coffee in my cereal thinking that it's milk... And if you are also like me and like the occasional chocolate fix I have the PERFECT recipe for you that combines both!

     

    I give you my Coffee Chocolate Fix Parfait!A layered beauty of greek yogurt, coffee grounds, fresh brewed coffee, chia seeds,chopped walnuts, dark chocolate and oats! Its a perfectly balanced breakfast that you can put in your to-go cup and eat when you get to work if your an early bird like me and get to work early!

     

    You Need:

    - 1 cup non fat plain greek yogurt

    - 2 tbs chia seeds

    - 1 packet of sweetner ( I had Splenda on hand, but I go for Stevia now a days 🙂 )

    - ¼ cup fresh brewed coffee

    -1 tbs chopped walnuts

    - 2 small spoonfuls of coffee grounds

    - ¼ cup rolled oats

    - dark chocolate chunks ( I used 90% cacao because its healthier and I like very dark chocolate! )

    - sprinkle of cinnamon

     

    Directions:

    Gather all ingredients ( ignore the almond milk, I was using that for my 'creamer' in my actual cup of coffee)

    In a small bowl combine greek yogurt, chia seeds, sweetener,  and cooled coffee ( for that coffee taste throughout)

    Next, gather your remaining ingredients for the fun part, layering! Layer your parfait however you like it! I like to start layering in this order: yogurt mixture, oats, cinnamon, walnuts, coffee grounds, and chocolate until I reach the top!

    Optional garnishes are sugar free chocolate syrup and fat free whip cream!

      I'm with you -- I can't function until I've had my coffee in the morning. Heck, I can't even brew a cup of coffee until I've had my coffee!

      Ha! See and I'm the opposite, no caffeine for me. Not to say I'm not tired in the morning, I just can't have it. So I'll have my parfait sans the coffee. 🙂
