    Bacon Onion Yogurt Dip

    picnic 1

So this past weekend I got a little carried away with myself because we were going to go to our favorite spot for a picnic and I wanted it to be perfect.

Yes, I am a cheesy romantic that loves corny romantic gestures in real life and in 80's movies.

    Bacon Onion Yogurt Dip

There is also the need for it to be healthy and delicious. I came up with something amazing...Bacon Onion Yogurt Dip that is not only goes with dipping your veggies in ( I love mini sweet peppers) but also doubles as a sandwich spread! I also know that bacon and healthy in the same sentence sounds like an oxymoron but the truth is everything is healthy in moderation. I only used a few slices of bacon ( drained of grease), then patted down even further to get any excess grease.

    Serves 8:

Nutritional Info approximately based off of My Fitness Pal: Calories: 129, Fat:9g, Carbs:4.6g, Protein:5.8g

    You Need:

    - 5 slices of bacon ( save 2 for sandwiches :))

    - black pepper

    - 1 white onion diced finely

    - 1 teaspoon garlic powder

    - 1 tbs Worcestershire sauce

    - 2 tbs green onion sliced

    - 15 oz nonfat plain Greek yogurt

    - 8 oz ⅓ reduced fat cream cheese ( softened)

    Directions:

    Prep veggies

In a large skillet cook bacon on low heat until done and on the crispier side ( i like to season bacon with lots of black pepper)

Remove bacon from skillet and drain all but approximately 1 tbs of drippings

In same skillet, saute onions on medium low heat for 25 minutes and let cool.

In a stand mixer ( or use an electric mixer) blend cream cheese, yogurt, Worcestershire sauce, garlic powder, scallions, and onion.

Crumple 1 slice of bacon on top and enjoy!

Thus, the Bacon Turkey Club was born: pumpernickel rye swirl bread, with 3 oz of turkey breast, lettuce, red onion, bacon slice, and bacon onion yogurt dip spread to make this sandwich drool worthy! We pretty much inhaled ours!

    picnic 5

For a snack we munched on some of these crackers, cheese, and pepperoni slices ( it reminded me of lunchables in my lunch when I was a kid) we were so full from our sandwich we only had 2  cracker stacks!

But, of course there is always room for dessert! I made a peanut butter cup yogurt dip! I wanted something with chocolate to dip our fruit in and oh em gee is it incredible!

It's also SUPER easy to make:

Just 2 tbs of Skippy's Dark Chocolate Peanut Butter and 6 oz of Vanilla Greek yogurt

    Mix thoroughly

    Jake and I on picnic

We love this spot. We have come here many times. I will tell you a funny story from several years ago... Love it or hate it I love 80's classic rock especially Guns N Roses. And in the video "November Rain" Slash plays a guitar in the middle of a field, so Jake got the idea to give me a keyboard on my birthday in our picnic spot so I too can play in a field. And this is one of the many reasons I love him 🙂

Overall it is beautiful here, we sit in the shade of this giant beech tree and the house is just gorgeous! The owners of this house left it to the state and it is now a park for anyone to enjoy!

I hope you like these picnic lunch ideas and share them with your loved ones too!

This dip looks delicious! I'm a hopeless romantic also....and I love picnics. I don't enjoy them as much as I should though.

Your picnic sure looks a lot fancier than those I pack for me and the kids, lol. This dip sounds awesome. I'm always looking for new ideas like that. Thanks!
