    Swiss Chard Pesto Pasta

    Swiss Chard Pesto Pasta 2

    I know I sound repetitive at this point, but I seriously love having a garden and one that provides so much veg! Especially the zucchini, I am drowning in it! I basically have Zoodles everyday! Not complaining!The one we found yesterday morning was HUMONGOUS!!!   I weighed it...3.1 lbs!!! It's almost as big as Fifi!!!

    Stay tuned, because we are beginning our Fall garden plans!

    Back to the chard:We have been enjoying swiss chard all summer from veggie wraps, salads, and I want to share with you this pasta recipe we have been enjoying. 

    I love spinach pesto, and I thought "Why not swiss chard?" Toss it with some pasta, cherry tomatoes, and some turkey kielbasa! Perfect summer pasta right there. 

    For the pesto:

    1 cup of chopped Swiss Chard

    3 tbs chopped basil leaves

    ½ cup extra virgin olive oil

    3 cloves of garlic

    salt and pepper

    ¼ cup of walnuts

    Juice of 1 lemon

    zest of 1 lemon 

    3 tbs parmesan

    For pasta:

    1 box of your favorite pasta

    Turkey Kielbasa ( I used Jennieos )

    15 cherry tomatoes sliced in half

    Directions:

    In a food processor, combine all the pesto ingredients and pulse until thoroughly blended

    swiss chard pasta

    Prepare pasta according to box instructions

    Saute turkey kielbasa in skillet for 5-6 minutes

    Top with more parmesan! 

    Toss pasta with pesto, kielbasa, and cherry tomatoes and serve!

      Yum! I love pesto. This looks awesome! And with tomatoes in season, I'm sure some roasted cherry tomatoes would be delicious!

      I need to play with swiss chard. I've never cooked with it. I think a pesto is a good start. Thanks for the idea!

      In the summer zucchini is the gift that keeps giving. Shred it up and freeze it. That way in the middle of winter you can have zucchini chocolate cake...yum!

      I can totally relate to your zucchini issue...our garden is going crazy this year! This look delicious - never thought to use swiss chard (which we are also growing) as a pesto. Great idea!

      I've never actually tried swiss chard. I've seen it at my local farmers market, but never bought it. Maybe I'll pick some up and try out this recipe!
