    Goldfish Chicken Salad

    Goldfish chicken salad

    I don't think this meal could get any more kid friendly. It's goldfish encrusted chicken tenders that you can serve over a salad, or serve with your favorite ranch or honey mustard dipping sauce! I have been saving this recipe for a long time! It was my go to lunch/dinner option in Jake and I's college days. 

    I can't believe I didn't share this one with you guys sooner! Everyone loves this dish, my husband, little brother, sister in law, and I am sure your family will love it too! 

    Not to mention it takes less than 25 minutes to have dinner on the table for the whole family! 

    Goldfish Chicken Salad 2

    You Need:

    1 lb chicken tenderloins

    1 cup of crushed goldfish crackers

    ⅓ cup of light ranch dressing

    4 cups of chopped romaine salad

    sliced cucumbers

    cherry tomatoes

    reduced fat shredded cheddar cheese

    more Goldfish for croutons 🙂

    Directions:

    Preheat oven to 350

    Spray a baking sheet with cooking spray

    Season chicken with salt and pepper

    Put ranch dressing in one shallow bowl and goldfish crumbles in another

    Dip chicken in ranch then roll in goldfish crumbles to completely cover 

    Place chicken on baking sheet and bake for 20 minutes or until thoroughly cooked

    While chicken is baking, make salads 

    Serve chicken on top of salads

    Enjoy!
