    Berry Peachy Oatmeal

    Oatmeal is one of those breakfasts that can be dressed up in so many ways that it is almost impossible to get bored with it! I love coming up with different oatmeal ideas from adding honey, nut butters, nuts, fruits, and seeds! The options are endless! 

    This is also another great recipe for those of you back in college. Just have some oats on hand, and fresh fruit and nuke it in the microwave before class! Great way to stay on track without indulging in something filled with processed sugar and refined flour. And for us workin folk, a great breakfast idea when you need to bring breakfast & lunch to work! 

    I am still using up the last of those peaches available in the stores and I thought it would be great in my morning oatmeal.  I love adding fruit to my meals so I can reach my daily macro nutrients for the day! 

    Full of fiber and antioxidants, this oatmeal will have you feeling satisfied throughout the day and is ready to eat in less than 5 minutes! Or (as I do with my husband daily, I make his to go to eat at work!) 

    Berry Peachy Oatmeal 3

    Serves 1

    You Need:

    ½ cup of old fashioned rolled oats

    1 cup of water ( or skim milk if you prefer)

    1 tbs dark brown sugar

    ½ teaspoon vanilla extract

    1 peach

    ¼ cup blueberries

    Chopped walnuts ( for garnish)

     

    Directions:

    Slice the peach in half and remove the pit

    Dice ½ of the peach and mix in a bowl with oats, water, brown sugar, and vanilla

    Microwave for 2-3 minutes 

    Slice the other half of the peach into thin slices and place on top of oatmeal

    Top with blueberries and a sprinkle of walnuts

    Enjoy!

      We haven't had a big peach season here at our local markets, but peaches and oatmeal is an all time favorite combo of mine. You have me inspired to look a little harder this weekend to find some!!

      I kid you not, oatmeal is one of my favorite ways to start the day...and for the same reason - it's so customizable. I love your berry peachy version, it just captures a sunny summer morning!
