    Spooky Chicken Tostadas

    I decided to get a little fancy with my Tuesday Taco night yesterday. And I had a BLAST making these. I love being creative and I am still a kid ( inside my head) so drawing on my tostadas seemed like well, a no brainer.

    And as "fancy" as these look they took literally less than 15 minutes to make! I used leftover prepped chicken that I made for the week ( I highly recommend making chicken for the week so you don't have to mess with it when you come home from a long day!). So basically all I had to do was make the toppings I wanted! Easy peasy!

    And I would also like to take a moment to apologize for being such a SLACKER with my posts the past week or so. I just started at a new position and I am busy busy busy! But, that is not going to stop me from doing all the things I want to do like make my healthy recipes, workout ( even if it is at 3:30AM), binge watch Gilmore Girls, and still spend time with Jake and kitties! My first and foremost priority is to maintain my healthy lifestyle! Eating lean. clean, and green is always on my brain!

    But, anywho, back to these tostadas! They are crisp, loaded with veggies, and lean protein! Plus, you get to decorate them how you please with lime infused plain Greek yogurt! Great idea if you have kids!

    You Need:

    6 Chi Chi's flour tortillas

    6 oz of cooked chicken breast ( shredded)

    3 tbs of low sodium/ fat free refried beans ( I used Amy's)

    2 tbs diced tomatoes

    2 oz Non fat plain Greek yogurt

    juice of ½ lime

    5 black olives ( i cut them up to resemble spiders)

    2 tbs scallions, chopped

    Directions:

    Preheat oven to 350

    Bake tortillas in oven until crisp ( about 8 minutes)

    Put lime juice and yogurt in a zip loc bag and smoosh it all together. Clip the end off with scissors and draw on your tostadas to your hearts content!

    Decorate your tostadas! I used avocado or beans as the base, then added veggies, chicken, and drew "Spooky" things like " Boo!", Spider webs, and Jack O Lantern faces! Have fun!

      Love it - Taco Tuesday that is what its often at this house. The spiders are awesome - I also love Halloween and am a little kid at heart 🙂

        Yes... 3:30 AM I workout till 4:30-5:00AM depending on how long my workout is then hub leaves at 5:00AM and I'm not too far behind lol it's worth it cause the gym is empty and peaceful!
