    Turkey Cranberry Wrap & Broccoli Cheddar Soup

    If you have been reading my blog the past few weeks, you may have noticed that I am off schedule and my posts are more random. Since starting my new job, my schedule has been crazy! Getting up at 3:30 to go workout, make Jake’s breakfast/lunch, make my lunch, feed the kitties, and out the door by 6!

    With my crazy new life style, I have begun a new love for my DVR. It records my silly daytime shows I took for granted. One of my guilty pleasures is watching the Rachel Ray show from time to time. I know…. It can be a bit much at times. I come home from my early morning gym session and sip my coffee as I watch RR, I usually fast forward to the good part (where she is actually making the recipe). This episode I caught last week was all about quick meals in like 15 minutes or less!

    I edged on my seat to see what they would come up with. And they made this insane looking bright green broccoli cheddar soup! I knew I had to make it. I did a few days later and man is it good! And of course healthy! Much better than the canned version!

    I also was thinking of Thanksgiving and what to do with all those leftovers. So I paired my broccoli cheddar soup with a Turkey Cranberry Wrap. Best.Combo.Ever.

    I have also been really good about getting all my veggies in everyday, so veggie stuffed soups are my go to when I don’t want a big salad or steamed veggies. You HAVE to make this!

    Creamy, cheesy, broccoli soup is paired with a turkey cranberry wrap with a whole wheat tortilla and brie.

    Turkey-Cranberry-Wrap

    You Need:

    Serves 4

    For Soup:

    1 head of broccoli florets, steamed

    1.5 cups of reduced sodium chicken broth

    ½ cup 1% milk

    1 tbs unsalted butter

    1 small onion, diced

    Salt& pepper to taste

    1 cup reduced fat cheddar cheese

    For Wrap:

    4 low carb whole wheat wraps

    4 oz of brie

    3 tbs unsweetened dried cranberries

    12 oz of leftover turkey breast, shredded

    1 cup of greens, your choice (I used romaine)

    Directions:

    In a small skillet melt butter over medium and add onion until softened ( 5 min)

    To a blender add the milk, chicken broth, salt, pepper, steamed broccoli, and onions

    Blend until smooth

    Add cheese and blend until desired consistency

    Serve in 4 bowls

    Assemble wraps by spreading brie on each wrap and layering turkey, greens, and cranberries and serve alongside soup!

    Enjoy!

      I love that you're so dedicated to your workouts. It takes some serious dedication to get up at 3:30am! Both the wrap and soup are exactly the sort of things I crave on these chilly days.
