    Eggnog Oatmeal Raisin Cookies

    I am completely engulfed in the Christmas spirit this year. Do you ever have years where you are just not that into it? That was last year. No reason. Just didn’t “feel” like Christmas.

     

    I am ALL about it this year! I have all of the presents bought, they just need wrapping. The decorations are up and I discovered a wonderful thing at the grocery store last year thanks to one of my favorite bloggers Tara. Silk and So Delicious make dairy free eggnog and it is absolutely delicious. I tried it last year and fell in love. I even made her Eggnog muffins which are awesome!

     

    So I knew this year I had to make something else with their eggnog. I decided on cookies. Especially since Santa is coming to town and many of you go to cookie exchanges. These would be perfect to give as a gift in a festive tin as well. Or you can just hoard them to yourself…no one’s judging.

    Eggnog-Oatmeal-Raisin-Cookies

     

    Oatmeal cookies are definitely on the top of my list of favorite cookie types. What is your favorite cookie type?

     

    Rolled oats are blended with eggnog, brown sugar, cinnamon, and cloves to develop the ultimate Christmas cookie just in time for the holidays. Seriously, this cookie tastes like Christmas. It’s magic. Make them, try them, eat them, and love them.

    Eggnog-Oatmeal-Raisin-Cookies

     

     

     

    Eggnog Oatmeal Raisin Cookies

    You Need:

     

    2 cups of rolled oats

    1 cup of flour (I used Bob’s Red Mill whole wheat pastry flour)

    1 teaspoon baking soda

    ½ cup of butter softened

    1 cup dark brown sugar

    1 cup Silk or So Delicious eggnog

    ½ cup unsweetened applesauce

    1 egg

    ½ teaspoon cloves

    ½ teaspoon nutmeg

    1 teaspoon cinnamon

    ½ teaspoon salt

    1 cup raisins

     

    Directions:

    Preheat oven to 375

    In a stand mixer, mix together the flour, oats, baking soda, and salt.

    In a separate bowl, combine egg, butter, sugar, spices, eggnog, and applesauce.

    Eggnog-Oatmeal-Raisin-Cookies

    Pour wet ingredients with dry and mix thoroughly with mixer.

    Add raisins and combine.

    Line baking sheets with parchment paper and dollop 1 tbs of cookie dough 2” apart from each other ( I had to make mine in batches)

    Bake for 12-14 minutes

    Let cool on cooling rack

    Enjoy!

      When my 13 year old sprung a surprize on me this morning that he needed to take a baked item into school today, I rushed to the computer to find this recipe, that I have been dying to try for a while now. I have never made cookies so quickly before. I halved the recipe and used a 1 tablespoon scoop to measure the dough out. Received a lot of compliments from the entire family - the smell, look, texture and taste were divine! I will try chopped walnuts too instead of some of the raisins next time. I am so glad to be your 100th reviewer! Now going to watch out for all Bev's recipes.

      I had no idea that Silk made Eggnog! I buy Silk-everything! Will definitely be on the lookout for that one. The cookies look so darn good!

      i am with you - this year is a Christmas spirit on year for me as well. All presents are bought, shipped and just some wrapping is needed. Am really feeling the spirit 🙂

      I am not a big fan of egg nog but maybe my girls are; so I should try and get some Silk egg nog and give your cookies a whirl.
