    My New Year’s Resolutions consist of:

    1. Spend more quality time with Jake
    2. Get slimmer
    3. Stick to a low carb high protein lifestyle (so far so good!)
    4. Go to Crossfit 4 times a week ( right now we go 3 times a week)
    5. Grow the blog (I want you to tell me what you would like to see here!)
    6. Gain more confidence!
    7. Conquer the road bike ( I am still getting used to gear changes)

     What are your resolutions? I am proud to stay that I stuck with my resolution from last year which was to get slimmer and become fitter. I smile at myself more in the mirror than I did a year ago. My winter clothes from last year are big on me or no longer fit because they are too big. AND the other day I found a pair of jeans from HIGH SCHOOL and thought “What the heck?” I tried them on, and they fit! How’s that for an ear to ear grin on my face???

     This just proves that this low carb, high protein, cross fitting lifestyle is working for me! And the biggest driver to this “success” is meal planning! I remember a year ago I didn’t even know where to begin when it came to healthy meal planning. Now, I feel more in control and I make it fun!

     Starting next week you will see a new feature here on The Kitcheneer. My weekly meal plan! I will share with all of you what I plan to eat for all of my meals throughout the week!

     Speaking of meal planning, I was DETERMINED this weekend to get some blog work done. I have felt like such a slacker lately. I have a stack of blog posts, pictures, and other ideas piled up that I have not been able to get too. When this weekend came along I knew I wanted to take advantage of the sun (which has been missed for some time) and take pictures of some of the recipes I have waiting for you! I got a lot done this weekend and wanted to share my Sausage and Veggie Egg Bake with you first!

     Sausage and Veggie Egg Bake is an easy way to make sure you get your protein and vegetables in the morning! This batch makes enough for 8 healthy portions. So you can feed the whole family and more at home, take to church for breakfast, or make for your weekly meal prep for your breakfast all week long!

     The sausage and veggie egg bake is stuffed with turkey breakfast sausage, tons of sautéed vegetables, a mix of eggs and egg whites, and some mozzarella cheese!

     I made this so I could cut it up in portions to pack individually for my breakfasts at work this week! I am  in love with this recipe and will be having it for many more weeks to come!

    Serves 8

    Calories: 211, Fat: 11g, Sodium: 800mg, Carbs: 3.3g, Fiber: 1.2g, Protein: 24g

    You Need:

    6 eggs

    6 egg whites

    1 cup of reduced fat mozzarella cheese

    1 cup of sliced shitake mushrooms

    2 diced bell peppers

    1 head of broccoli, cut down to florets

    1 package of Jennieo’s hot turkey breakfast sausage

    Salt and pepper

     Directions:

     Preheat oven to 350

    Gather ingredients

    Chop Veggies

     In a large skillet on medium heat crumble breakfast sausage and sauté until cooked through (5-7 minutes)

     Place cooked sausage in a baking pan

     In same skillet, on medium heat, sauté the vegetables for about 10 minutes, or until softened

    Place cooked vegetables in with the sausage and toss together

     In a medium sized bowl whisk the eggs and egg whites together with 1 teaspoon of salt and as much black pepper as you wish! Also add a ¼ cup of the cheese to the mix.

     Add ½ cup of cheese on top of veggies and sausage

     Pour egg mixture on top of the veggies and sausage until covered.

     Sprinkle remaining cheese on top

     Bake in oven for 30-40 minutes or until eggs are thoroughly cooked through

     Cut into 8 even squares and serve now or later!
