    Crockpot Very Veggie Minestrone Soup

    If you have a schedule that is jammed pack with stuff to do. Making dinner on top of that is probably the LAST thing you want to do when you get home. Been there. Done that.

     

    Between working a full time job, doing Crossfit 3 times a week, normal gym on the other 2 days before work, and blogging, I am wiped out at the end of the day! That’s why there is such a thing as the glorious crock pot.

    While you work all day, it cooks for you. How much simpler can it be?

     

    And with an all-vegetable soup, there is no browning of anything before you dump it in the pot! I love Very Veggie Minestrone soup, because its packed with good for you veggies and low in calories!

     Jake and I have also had pretty bad colds recently, so coming home and holding a hot mug of this soup is just what we wanted for dinner.

    And once again, I am all about portability here. Soup is “souper” easy to pack up and take with you to school, the office, or anywhere that has a microwave. And another great part: it’s freezable! If you have WAY too much soup to handle, just let it cool, pour into a freezer safe gallon sized bag and lay flat in the freezer for up to 2 months! When you want it, take it out and put it back in the crock pot to thaw and heat up again! Easy peasy!

     

    Very Veggie Minestrone is the perfect way to get your veggies in the winter time, less than 200 calories for a hearty serving. To make it a meal, pair it with a salad or half of a sandwich!

     Very-Veggie-Minestrone

    Serves: 6 Calories: 286, Fat: 4g, Carbs: 21g, Protein: 8g, Sodium: 350mg

    You Need:

    32 oz of unsalted vegetable stock

    1 can of unsalted diced tomatoes

    1 can of reduced sodium black beans, drained and rinsed

    1 can of reduced sodium dark red kidney beans, drained and rinsed

    3 medium carrots, sliced thin

    3 celery stalk, chopped

    1 large zucchini, diced

    1 tbs of herbs of provence or basil

    1 red bell pepper, diced

    1 teaspoon kosher salt

    1 teaspoon dried parsley

    1 teaspoon garlic powder

    Fresh cracked black pepper

     

    Directions:

    Prep veggies

    Add veggies to crock pot

    Add seasonings

    Pour vegetable stock over and mix to combine

    Set on low for 6-8 hours

    Enjoy!

      I should really use my crockpot more often. Especially during the week when I always seem to be too busy/exhausted to cook. Minestrone is one of my childhood favorites and I'd efinitely love to be greeted with a pot of this when I get home from work!
