    Food trucks and farmer’s markets should go hand in hand in my opinion. Fresh local meat and produce in the convenience of a food truck outside the office. However, life doesn’t work that way…yet.

    I actually like food truck food. If you find the right ones, they offer a variety of fresh ingredients in their food and it can be easily “Paleoized”.

    Thanks to Jennieo and my monthly “meat box” I got a package of Ground Turkey and knew exactly what to do with it. Make it into Tacos.

    Not just any tacos but Paleo Street Tacos! Inspired by the real deal. And it’s all about the meat in authentic Mexican Street tacos so I am here to make sure that happens!

    These tacos are knee slappin’ good!

    Paleo-Street-Tacos

    I made Paleo tortillas from fellow blogger Stupid Easy Paleo and added my own Taco blend of seasonings. Paleo Street Tacos=Bright purple cabbage, red onion, diced green bell pepper, diced cucumber, pico de gallo, and a creamy avocado dressing to drizzle on top. YUM.

    Seriously, go make this now! This is not a request! 😉

    And if you are sticking to your Whole30 guidelines, simply omit the Paleo tortillas and sub it with butter lettuce for your tortilla! BOOM.

    Paleo-Street-Tacos

    Makes 4 servings:

    You Need:

    1 lb Jennieo Ground Turkey or meat of choice

    1 tbs paprika

    ¼ teaspoon smoked paprika

    ½ teaspoon cayenne pepper

    ½ teaspoon cumin

    ½ teaspoon ancho chili powder

    1 teaspoon onion powder

    1 teaspoon garlic powder

    1 teaspoon of Spicy Flavor God (if you have it)

    2 green bell peppers, diced

    ½ red onion diced

    ½ cup pico de gallo (I got mine at Costco)

    ¼ cup of shredded purple cabbage

    Creamy Avocado Cilantro Dressing:

    1 avocado

    ½-¾ cup of avocado oil or light tasting olive oil ( add more if you want a thinner dressing)

    1 teaspoon salt

    Juice of 1 lime

    ¼ cup of chopped cilantro

    3 garlic cloves, minced

    Pinch of red pepper flakes

    Find tortilla recipe here.

    Directions:

    Make tortillas and set aside.

    Mix spices together in a small bowl for your taco seasoning

    Chop all veggies for taco toppings.

    In a large skillet, spray with coconut oil and add ground turkey

    Break turkey apart into small crumbles and brown it

    Once browned, add the taco seasoning. Stir to thoroughly coat turkey

    Turn off burner once turkey is fully cooked.

    For the dressing, combine all ingredients in a blender or food processor until smooth.

    • 1 lb

      I was really intrigued by the pale tortilla but th slink got me to the general page. I guess it's an omelet? Also I need to get on the whole 30 thing & check it out!! 🙂

      A big huge YES to your first sentence! I am already always at my local Farmers Mkt the 3 days its open...if that happened you could never make me leave lol! I'll start with one of these tacos!
