Grilled Chicken Cherry Salad
I used to hate summer.
Out of all the seasons I dreaded it. Because of how I view myself in my head. I never wore shorts, tanks, or enjoyed being out in the sun. I would sweat easily and whatever outfit I did decide to wear just didn’t cut it for the heat.
Not to mention I have that pale Irish skin 😉 (Not much I can do about that except some SPF 70!)
To me, June, July, and August could hurry up and get out so I could welcome the cool crispness of Autumn.
Then I found Crossit. It is there I am beginning to understand myself and above all I have found more confidence that I have ever had in my life. It is there I am challenged to the point of no return. I can lift a 100lb barbell without fear and I am PROUD of my battle scars.
It is there I found balance in my mind, body, and soul. And to perform better there I developed better eating habits. Which I have learned is KEY to success. Eat less crap and get the results you want.
I have lost countless inches since I discovered weight lifting last summer. But nothing compares to the inches I have lost in my short 6 months of Crossfit!
I am actually wearing shorts and tanks and will be in my bathing suit when it’s beach time! It’s like becoming free of a dark place where I have held myself for so long. It’s indescribable. I continue to eat Paleo/Whole30 because of the results I am seeing.
Some question why? And if I miss the things choose not to eat. And in all honesty; I do. But I choose to eat this way because it works for me and by eating all the grain/dairy got me to that dark place I am doing my best to dig myself out!
And yes, I will indulge rarely. But it has to be worth it. Not because I have a craving. I t will be planned into my week. If it is planned you will not binge and eat all the things!
That is a really long way to say: Eat real food to be really happy 😉
That is where this gorgeous salad comes in. I spotted these beautiful cherries in the store and had to have them. We had also just put our new grill together and we were going to grill up some chicken for dinner anyways so…
This random pretty salad got thrown together!
Grilled Chicken Cherry Salad is dark leafy spinach topped with grilled chicken breast, red onion, and dark delicious cherries.
Serves 2
You Need:
2 grilled chicken breasts, sliced or diced (you choose)
4 cups of spinach
⅓ cup of pecans
¼ of red onion, chopped
1 cup of pitted cherries
½ an avocado, diced
2 tbs of olive oil mixed with some balsamic vinegar and a splash of lemon for dressing ( I squished the cherries on top of my salad for the dressing though! )
Directions:
Rinse and cut veggies
Grill chicken for approximately 7 minutes per side ( I used avocado oil with some salt and pepper)
Pit cherries
Divide spinach on to two plates and top with onion, avocado, cherries, and chicken
Enjoy!
