    Arugula Avocado Egg Toast

    Hi I’m Amanda and I love avocados.

    And in all honesty, I didn’t even like avocados until like a year or two ago. I think I had a bad one on a salad once and it turned me off for a long time. My impression was they were brown and slimy. SO NOT THE CASE!

    Avocados are nature’s butter. And it can be incorporated into so many things other than salads. Stuff it in a pita, on top of your burger, in your smoothies, or one of my favorites…slather it on toast.

    When you get up in the morning and are still rubbing the sleep from your eyes, stumbling around like a zombie in search of caffeine…who wants to make a healthy breakfast? Most of the time I don’t. Especially when there is a perfectly good granola bar within reach. That’s why toast is one of my quick go to options. I keep mushed avocado in the fridge with some lime juice (the acid from the lime keeps it green), so all I have to do is pop a piece of toast in the toaster, crack an egg (if there is time) and spread that delicious green goodness.

    Your body NEEDS fuel in the morning. You have been fasting for more than 7-8 hours and your glycogen levels are low and you need to feed yourself to raise the glycogen levels in your body. In short, glycogen is a simple carbohydrate in your body that is used for sudden intense bursts of activity. If you keep your levels low, you could be hindering your hard earned work! That’s why carbs in the morning are best. You have ALL day to burn it off. Even though I am low carb, that doesn’t mean I don’t eat bread. If I do, it’s whole grain and on days I work out hard. I want those lean muscles and fat loss. So in order to do that you have to fuel yourself right!

    And it’s true what one of my favorite fitspirational bloggers I follow says,” Your body is made in the kitchen and sculpted at the gym”

    This breakfast will provide you with a kick of whole grain carbs, healthy fats (avocado), vegetables (arugula), and protein (egg). Put them all together and you have one heck of a breakfast to fuel you through your morning!

    And of course, enjoy some coffee with this! Because you, know I basically need coffee with my oxygen 😉 JK I’ve cut down to just one cup a day! 😀

    This is my first week off the Whole30. I have decided to do 85% whole30 and add some things back in like this toast once a week!

    You Need:

     

    1 piece of whole grain bread ( I used Pepperidge Farms)

    ¼ of an avocado

    Small handful of arugula

    1 egg

    Mrs. Dash or Flavor god seasoning of your choice (I love Flavor God’s everything flavor on this)

     

    Directions:

    Put bread in toaster until desired toasting level (barely toasted to black)

    Heat a small skillet on medium heat

    Spray skillet with coconut oil and crack the egg in it

    Cook egg until desired doneness (I like it a little runny)

    Smoosh avocado with fork and add the seasoning

    Spread avocado on toast, add arugula, and top with the egg.

    Enjoy!
