    Grilled Lime Steak Tacos

    steak_tacos_instagram

I made these FANTASTIC tacos this past week and decided that this post could use a refresh! And some new pics! HOW DELICIOUS DOES THI LOOK?! I don’t think my old pictures did it justice.

I love going back to see where I was blogging wise a year two years ago. I didn’t have a nice camera like I do now (Pentax) and I knew next to nothing about lighting or anything concerning photography. And I am still learning! Please enjoy the new eye candy!

Did I mention these are my FAVORITE tacos??? Jake asks for them on the menu at least weekly.

I’m eventually going to go back and do a makeover for some of my other recipes and have them back on the homepage to be in the spot light again!

This time I swapped out some of the ingredients. I used pico de gallo and avocado crème with grilled peppers as my toppings instead of radishes and corn. But, use whatever is your fancy!

These tacos were still just as good as the day I first made them. And I am telling you, grilled limes are where its at! It gives the whole taco an amazing citrus twang. Just grill limes. Just do it.

    Ingredients

    1 2-3 lb flank steak

    2 limes, halved

2 bell peppers, cut into strips

    Pico de gallo

I used this recipe for avocado crème

    Rub

    2 tbs cumin

    1 tbs onion powder

    1 teaspoon kosher salt

A liberal use of ground black pepper

    1 teaspoon tarragon

    1 teaspoon paprika

    Corn tortillas

Or serve on a bed of greens!

    Instructions

    Preheat grill to 350⁰

Mix all spices together in a small bowl to create the rub

Rub the mixture into the steak evenly

Place steak on the grill and close the lid and grill 6 minutes per side if you like a medium cooked steak. Cook longer if you prefer well done

Add peppers and limes at the same time (take them off in 10 minutes)

Take steak off the grill and drizzle the grilled lime juice over top

LET THE STEAK REST for at least 5-10 minutes before slicing into it

Slice the steak across the grain and place in corn tortilla.

    Top with your favorite toppings!

I get a lot of questions on what to serve with each dish to make it a meal. So I will be incorporating an appropriate dish to accompany this one so you can enjoy a complete meal! Since this a meaty dish let’s pair this with a veggie or a fruit side dish. I love this watermelon salad as a great option or this black bean dip from one of my favorite bloggers Kristen from Iowa Girl Eats!

Just got back home from dinner at our favorite Mexican place and had something very similar to this. So, so good! And I like grilled fruit, too. Especially lemons and limes.
