    Whole30 Apple Turkey Lettuce Wraps

    These Whole30 Apple Turkey Lettuce wraps are your new favorite cold lunch option. Sweet apple slices paired with salty strips of crisp bacon. YUM.My greens have been on point all week long and I don’t feel like stopping.

    I have been making more of an effort to add greens to every meal. Except on days where we ate them all and it’s not grocery day. Being real here.

    And let’s have real talk.

    As a food blogger who also happens to work full time as an engineer, most of the food I make during the week is nowhere near as pretty as I make them look in these photos. I have a little food photo studio upstairs and I love having fun being creative on the weekends. But seriously, as a food blogger most of my meals are in these black containers that you saw in my meal prep post a little bit ago.

    Im 100% into meal prep and how they are such a life saver during the week. And most of my breakfasts and lunches are simple.

    Scrambled eggs plus fruit and nuts for breakfast and lettuce wraps and salads for lunches.

    Easy. Simple. Uncomplicated.

    That’s why I am sharing this little beauty this week. Cause work is stressful and not all meals are pretty.

    I do however make an effort to make dinner 5 times a week. And I usually rotate through old recipes on the blog to test them out and tweak any if I feel it’s necessary. Trying to make everything on here tasty and simple here on the blog for you.

    Which brings me to this Whole30 Turkey Apple Club Lettuce Wrap and all its glory.

    So easy that I usually just make them IN my little black containers and put the lid on. THE END.

    And it has everything I could want in a quick easy lunch.

    Romaine lettuce as the wrap. But you can use collards, butter lettuce, or Boston lettuce.

    At this point I put a little Dijon mustard and a small dollop of homemade mayo on here for extra flavor. But it’s completely optional.

    Now here’s my favorite crunch. Thin slices of apple. The sweet tart taste with the salty bacon is simply AH-MAZING.

    SIDE STORY: My mom and I were in NYC on one of our girl trips and I couldn’t have been sicker. I think I had pneumonia or something. But anyways, we were trying to catch an earlier flight and after running to the other end of JFK. I was white as a ghost and ready to pass out. I hadn’t eaten since the morning before. Mom saw a sandwich shop and bought us a baguette sandwich with turkey, apples, and brie. And I swear it was life blood. It tasted so good to me at that moment and gave me strength to keep me alert until our flight. Which is why I love the turkey and apple combo. 😀

    Next it’s the meats.

    Deli turkey and crispy bacon. Need I say more?

    Then I top it off with a little red onion and call it lunch!

    Ingredients

    Scale
    • 4 romaine lettuce leaves (you can also use bibb lettuce too!)
    • 4-6 slices of turkey
    • Apple slices (I love any apple variety here! Granny Smith gives it such a different flavor that I love!)
    • 4 slices of cooked bacon
    • Mustard (optional)
    • Mayo (optional)

    Instructions

    1. Gather all ingredients to make a speedy lunch prep out of this recipe.
    2. Fill your lettuce wrap with turkey, apple, bacon, and any other topping you wish!
    3. That's it! Store in a container in the fridge for later or enjoy right now!

      These are amazing and so easy to prepqre however I haven't mastered the rolling up

        Thank you Jenna! I find the easiest way to roll these up is to cut off the end of the stem. It makes it less rigid and easier to roll. But if you are still having issues, sometimes i cut the leaves in half to make squares and make lettuce "sandwich". 🙂

      I could certainly use less carbs in my diet, so the lettuce wrap is a great option for me. And bacon, well.... bacon <3
