    So, I made some KILLER guac for you guys today.

    How many of you LOVE Trader Joe's? I know I do and I pretty much love the freshness of their produce and this guacamole.

    I have been dying to recreate this guacamole at home now for ages! And i think I finally got the taste down.

    Unfortunately, there isn't a TJ's nearby so I always ask Jake to pick up a container of their guacamole. And get this, it's only 20 calories per serving. So eating the whole container in one sitting is definitely ok. Right? Right??? JK

    But it is REALLY hard not to.

    And out of all the dips,pesto, and sauces out there. Guacamole is my favorite. Like if I was on a deserted island and could only eat one thing forever it would be guacamole.

    Fresh hass avocados, low fat greek yogurt (hello extra protein), cilantro, red onion,tomatoes, and a squeeze of fresh. Simple yet oh so tasty.

    After smooshing the avocados down with a fork it's a very straight forward recipe of adding lots of fresh summer veggies and herbs. And I personally enjoy this with plantain chips. But you can even make this into an AWESOME part of a big summer platter. Maybe I will do another post on how to make the BEST summer garden guacamole platter. YES. YES!

    This guacamole pretty much makes the perfect companion to lunch, snack time, or dinner. Or hell, just grab a spoon and eat it for dinner. <-- true story

    And it's Tuesday, which means you NEED to make these burrito bowls and put stacks on stacks of this guac on top. DO IT NOW.

    Description

    Quick and easy guacamole recipe for those extra avocados in the kitchen!


    Ingredients

    Scale
    • 2 Hass Avocados
    • 2 Limes
    • 1 Roma Tomato, Finely Diced
    • 1 Jalapeno, Finely Diced (optional)
    • ¼ Cup Low Fat Greek Yogurt
    • ¼ Red Onion, Finely Diced
    • 3 Tbs Cilantro, Chopped
    • 1 Tsp Salt

    Instructions

    1. Smash avocado with a fork until smooth in a medium sized bowl
    2. Stir in yogurt, lime juice, onion, tomato, cilantro,jalapeno, and salt
    3. Grab a chip and enjoy!
