Yea, I totally went there.
If you have been a reader on The Kitcheneer for awhile, you know I am no stranger to twisting and tweaking recipes to fit my lifestyle. And I have been REALLY wanting pizza.
"but it's not REAL pizza!"
If it has all my favorites, and has sauce and cheese. Then I call it pizza.
And this pizza has tons of good-for-you veggies.
Spaghetti squash is God's gift to all of us who LOVE pasta but also want to fit in their jeans.
I figured if I can use it as a pasta sub, why not a pizza sub? I mean, people have been raving over cauliflower crust pizza for years. Maybe this crust can be the next biggest thing?
And guys, after a LONG work week I think a pizza night is totally necessary. It's Friday so let's have a glass of wine, grab a slice, and binge watch some Netflix.
So, let's talk weekend things!
What are your plans for the weekend? It's the first weekend in June and I am actually going to a friend's birthday party. it's 20's themed so it should be lots of fun! Then Sunday's I like to relax, put my jams on, and meal prep for the week.
Now, let's get to this pizza.
The spaghetti squash crust is VERY easy and definitely not scary at all.
I just bake the squash like I usually do for about 40 minutes in the oven and scrape the "noodles" out into a bowl filled with paper towels to soak up as much of the liquid as possible.
Let is cool for about 10 minutes then I mixed in the egg mixture and formed the crust on a parchment lined baking sheet to bake for another 15 minutes.
Flip half way.
Then add your favorite toppings! I added some of our usual contenders such as spinach, mozzarella, ground beef, green bell pepper, and onion. But you can use whatever toppings you like!
This pizza was delicious and totally made our pizza night!
And you can have alot more pizza if you are watching your figure because it's only 264 calories per serving! Yup! This recipe makes 3 small pizzas or you can make one large pizza. Completely up to you! I would make a double batch and have pizza for lunch meal prep. YUM.
