Your Monday just got a WHOLE lot better!
It is the middle of AUGUST (can you believe it???) and I realized after the CRAZYNESS of this summer I forgot to include an ice cream recipe on the blog. In fact, I don't think I have ever done and ice cream recipe here. SAY WHAAAATTTTT??? I am totally changing that today.
I am combining my love of Halo Top ice cream with my first love; coffee.
And guys, why didn't I think of this combo earlier?! Coffftee Floats FTW!
So I have a little back story on why I love floats so much.
We lived in Virginia Beach when I was little and during the summer my mom and dad would take me and my younger brothers to the park in our neighborhood. After a couple of hours of sliding down the FASTEST metal slide ever and having jumping contests off of the swing set with David, we all walked across the street to Dairy Queen and I would ALWAYS order the root beer float. I simply just loved the combo of the sweet root beer with that scoop of vanilla.
I was brain storming ice cream ideas for the blog this past weekend and it dawned on me that I should make my nostalgic treat but for adults and healthier too!
Now, you may be wondering why I am starting to reintroduce some foods that I haven't shown here on the blog in a while. After years of yo-yo dieting with not much luck, and finding the light to nutrition through the Whole30; I have now completed a full 12 week strict cut. Which included going back to basics (i.e lots of chicken and broccoli). My body was fine on the Whole30 and I do one here and there as a reset but my body needed another kind of reset. I learned to eat right on the Whole30 and found out a lot about myself and my body. Like soy is a no-no for me. However, portioning has never been my forte and I felt like I was consuming too much fat overall.
So I switched things up to include the foods I know I am tolerant of (like dairy and gluten) and kept it very high protein with low fat and much smaller portions. I am down 10.5lbs and gained muscle mass from 5x a week lifting at our crossfit gym! I feel great and want to continue this path of using foods I know are good for me, helps me get leaner, and continue to build on my performance at the gym. Strong is sexy folks!
This is why it's good to switch things up a bit and keep your body guessing. it helps with your metabolism and triggers fat loss.
Which is why I will be sharing a blend of Whole30 recipes along with all my clean eating ones. Because this blog is ever growing and will reflect what I am currently eating. And ice cream is always a good treat to have in moderation ;).
And honestly, this isnt' really a recipe as much as it is plopping a scoop of ice cream over top of cold brew coffee. Oh! and crushed coffee ice! I used Halo Top's newest flavor: Caramel Macchiato as my flavor of choice (hence my title choice) but you can use whatever flavor hits your fancy. Heck, make this even more adult with some Bailey's and a scoop of vanilla! YUM!
It truly is the easiest and healthiest way to enjoy ice cream this August! Plus the coffee becomes so rich and creamy after it melts a little.
SO good. SO easy. Go make this ASAP. It will make your Wednesday.

Caramel Macchiato Coffee Floats
- Total Time: 3 minutes
Ingredients
- ½ Cup Caramel Ice Cream (Halo Top)
- 2 Cups Cold Coffee
Instructions
- Pour cold coffee over ice in a glass
- Top with a scoop of ice cream and top with favorite toppings. I used caramel popcorn here for a fun twist!
