Instant Pot Short Rib Ragu is the perfect hearty and COZY quick weeknight dinner that you will have on REPEAT this holiday season!
Can you even BELIEVE Christmas is in just a few days?! Jake and I will be hosting Christmas Eve dinner and other days this week so I love having a bunch of quick (but crowd pleasing) recipes on hand!
Like this Instant Pot Ragu! You know me. I am all about the Italian food from my Italian grandmother's influence growing up. And all of those old slow simmering sauce I have been turning into Instant Pot re-creations!

I used The Honest Bison's Short Ribs in this ragu and it came out PERFECT. So tender-literally fall off the bone! And all done in 30 minutes in the Instant Pot!
I served this over my favorite Paparadelle pasta- but choose your favorite! I recommend sticking to a long grain pasta for the sauce and short ribs to cling to in every bite!

Description
Cozy, hearty, full of flavor but done in less than 45 minutes kind of meal! This Instant Pot Short Rib Ragu is the PERFECT quick week night dinner to bring to the table this busy holiday season!
Ingredients
2 tbs olive oil
1 tsp salt
1 tsp pepper
2 tsp Italian Seasoning
1 tbs fresh basil, chopped
¾ cup of red wine
2 tbs balsamic vinegar
28oz can of whole peeled tomatoes
6 cloves of garlic,
minced Parmesan cheese, grated
1lb of papradelle (or your favorite pasta), cooked per package instructions
Instructions
Set Instant Pot to Sauté mode and add oil.
Once heated, add short ribs to brown on all sides. (About 1-2 minutes per side)
Season with salt, pepper, Italian Seasoning, and basil.
Deglaze the pan with red wine- get all those yummy brown bits off with a wooden spoon.
Pour in the vinegar, tomatoes, and garlic.
Switch and Seal lid to Meat/Stew mode on high pressure for 30 minutes.
Allow Natural Release.
While the short ribs and sauce cook, make the pasta and shred the cheese.
Once sauce is finished, remove short ribs and shred the meat off bones.
Place shredded short rib meat back into the sauce.
Serve ragu over pasta with shredded parmesan cheese and fresh basil.
